I dip pork chops in an egg mixture, put breadcrumbs on them, salt and pepper and put them in a roasting pan that has melted butter and olive oil on the bottom. Sprinkle with salt and pepper and garlic and or onion powder and parsely. When the pork chops are in the pan, add 3/4 cup water to the bottom of the pan, wrap foil tightly around the pan and bake for 1 hour.
They come out amazingly fork tender and delicious.

Bake your chicken with HOT Sauce.... and for the pork... try using asian dressings...

just clean them up and put some spices on them and throw them in the oven

Dip in olive oil, season the chicken well with salt, pepper and italian seasonings -- the same with the pork chops, except not too much salt.

Place in foil lined pan and bake at 350 for 1 hour.

Get some mole sauce concentrate at a Mexican bodega and follow the directions on how to mix it. Take some chicken breast strips, fry them lightly on either side, cover them with the mole sauce and stick them in the oven for 15 minutes.

I also love unfried chicken, the recipe you can find in the book _In the Kitchen with Rosie_ (Rosie was Oprah's personal chef). It takes a long time, but it's worth it because it's delicious.

Put them in a baking dish and put
1. Just salt, pepper and oil on them.
2. Salt, pepper, onions, garlic, green pepper, mushrooms and a can of tomatos - serve over pasta.
3. Salt, pepper, onions, mushrooms, a little white wine, cream of mushroom soup and parsley - serve over rice.
4. Salt, onions, hot peppers, cheddar cheese soup - serve with spanish rice.

Bake all the above, covered, for 45-60 minutes.

Also what we do some time is cook chicken in Coca Cola for about 1\2 hour, then fry in oven.

For either, try making an apricot glaze. All you do is mix 1 packet of onion soup mix with 1 cup of either Italian or Russian salad dressing and 1 cup of apricot preserves. Then pour that over your chicken or pork chops and bake. I bet you could buy apple preserves also and do the same thing... that might taste even better on pork chops! Its yummy!!! The onion soup and dressing take away a lot of the sweetness of the apricots so its not sickeningly sweet.

I've been looking for ideas for baked pork chops, a lot of the recipes I have seen use soup or something else that makes them "wet" and no one in my house will eat a soggy pork chop :) that being said.. here is a recipe I tried last night and it was a winner with my family.

OVEN BAKED CHICKEN OR PORK CHOPS

3 lb. chicken or pork chops
1 c. dry bread crumbs
1/2 c. grated Parmesan cheese
1/2 tsp. garlic powder
1/2 tsp. pepper
4 tbsp. butter, melted

Combine bread crumbs, cheese, garlic powder and pepper. Dip each piece of chicken in butter, then roll in dry mixture. Place in greased baking pan. Bake at 350 degrees for one hour. Serves 4.



Edit: I just found this recipe on the same site I got mine from yesterday =) pretty interesting, because I never saw a recipe using pork chops and chicken in same dish.

OVEN BAKED CHICKEN AND CHOPS

1/2 c. all purpose flour
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
4 chicken breast
4 pork chops
2 tsp. butter, melted
1 sm. green pepper
1 sm. onion

Heat oven to 425 degrees. Mix flour, salt, paprika and pepper in a bowl. Dip chicken and chops into butter, roll in flour mixture to coat. Arrange in a large ungreased square pan. Add onion and pepper diced. Bake for 55 minutes.

Moms Accidental Teriyaki Pork Chops

This dish can be made more or less sweet according to taste. It is just as good without the mushrooms.

6 to 8 pork chops (boneless) or chicken
? cup butter or margarine
3 TBS olive oil
1 cup slice mushrooms (optional)
? cup sweet wine (White port wine is good)
? cup Kikoman Teriyaki Marinade
? cup corn syrup or sugar (optional), use only if you like your teriyaki a little sweet
1 - (10 ? oz) can white sauce or package white sauce made according to directions

In large skillet brown pork chops in 2 tablespoons melted butter and 2 ablespoons olive oil. Remove chops from pan. Add remaining butter and oil to pan drippings. Add mushrooms and sauté until golden brown. Add remaining ingredients except white sauce. And simmer for 15 minutes. Add white sauce and stir until smooth and completely blended. Place pork chops in a 3-quart casserole dish and pour sauce over it. Bake at 350F for about 1 ? hours or until chops are tender.

Makes 6 to 8 servings.

Serving suggestions: Goes great with mashed potatoes (use the sauce over the potatoes), pasta, or rice.


Chicken Enchilada Casserole

1 – 1 ? lb boneless chicken, cut into bite size chunks
1 can cream of mushroom soup
1 - 8 oz carton sour cream
1 small can chopped Ortega green chiles
1 sml package flour tortillas, cut or torn in small pieces
8 oz jalapeno or regular jack cheese, grated


Cook chicken in skillet with a little water and ? tsp garlic salt or powder, until no longer pink Remove and reserve.

In a bowl combine the next four ingredients, plus 6 oz of the cheese, and the chicken. Mix well and place in greased casserole dish. Top with remaining cheese and bake at
350 F for 1 hour.


Serving suggestions: Mexicorn and Mexican rice.


Mushroom Chicken

4 boneless or bone-in chicken breasts
1 can cream of mushroom soup
1-8 oz container of sour cream (regular or light)
2/3 cup sherry
1 cup sliced mushrooms
1 tsp garlic salt
pepper to taste

Mix together everything but the chicken in a bowl. Pour half or the sauce in a casserole dish. Add chicken breasts and top with remaining sauce. Bake at 350F for 1 hour.


Serving suggestions: Mashed potatoes with sauce as gravy or red potatoes, vegetable, and Hawaiian rolls.


These are not baked but they are really good.


Spicy Cajun Grilled Shrimp, Fish, Pork, or Chicken

1/3 cup soy sauce or Kikoman Teriyaki Marinade
? cup virgin olive oil
1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it
? cup sesame oil
? cup fresh lemon juice
2 tbs fresh ginger
2 tsp dry mustard
2 tsp tabasco
32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)
Bamboo skewers (1 for about 5 shrimp)

Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.


This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs


Cajun Fried Chicken or Pork

4-5 boneless chicken breasts, boneless pork chops
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
? cup water
1 – 1 ? cups oil, for frying

Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.

Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.

Heat vegetable oil in large skillet on medium high heat.

Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.

Serving Suggestions:
Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.
