That's a really tough question! There are so many things one can do with potatoes! But here is a recipe that is always a hit when I serve it...it goes with most anything & yes, you can put gravy on it, but certainly doesn't need it:

Better than Grandma’s Mashed Potatoes

3 pounds baking potatoes, peeled
2? quarts chicken broth
4 small carrots, scraped and cut
into ?-inch pieces (I think 2 is plenty)
1 small onion, chopped
? cup butter or margarine
1 teaspoon dried dill weed
1? cups sour cream (I think 1 cup is plenty)
3 tablespoons chopped fresh parsley
1 teaspoon salt
? teaspoon pepper
1 tablespoon butter or margarine



Combine potatoes and chicken broth in a Dutch oven; bring to a boil. Reduce heat, and simmer 15 minutes. (I skip that part & either microwave or bake the potatoes whole…then use a potato ricer to mash…saves peeling.) Add carrot and onion (now I use just one small 14 oz. can of chicken broth, because it is only the carrots and onion in the pot), and simmer 20 minutes or until tender; drain.

Combine cooked vegetables, ? cup butter, and dill weed in a large bowl; mash (I use the food processor for the carrots & onions & then just mix everything together). Add sour cream and next 3 ingredients, stirring well. Spoon potato mixture into a greased 11x7x1?-inch baking dish; dot with 1 tablespoon butter. Cover and back at 325? for 1 hour.

Yield: 8 servings.

I love eating Lyonnaise Potatoes but I also enjoy serving them to guests. The nice thing about them is that you can make them ahead up to a point and then finish the casserole about 45 minutes before you're ready to serve it. It's a lovely combination of firm/tender potatoes, onions and an herbed sauce that is so different than most potato casseroles.

Two words: Mashed. Potatoes.

Mine is mashed potatoes

*12 or so red potatoes with the skins left on
*Boil until you can easily pierce the potato with a fork
*Drain
*add 1/2 cup of butter
*add 1/2 cup. Sour Cream
*add 1/2 cup Mayo
*6 Tbs. Parmasan Cheese
*Sprinkle with Garlic Salt or about 2 cloves of pressed garlic
*Enough milk to make it smooth

**Key to the creamiest mashed potatoes is to use a mixer. Enjoy!

SWEET POTATO SOUFFLE:

3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows

In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 3/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook

DIRECTIONS
In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.
Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about 3 minutes on each side, until browned and crisp. Drain on paper towels.

Okay this is a cruel question for you to ask. I love potatoes of all shapes, sizes, colors, and flavors. Also just about anyway you can prepare them I will eat them, but my all time fav is probably mashed left a little lumpy, with some corn and cheese, and a little chicken gravy. Hmmmm now I know what I am having tomorrow. I also really like to make my own chips, sliced paper thin, and then topped with lime powder, seasoned salt, and pepper. Mmmmmmm
