*Saucy Barbecue Burgers

INGREDIENTS:
1 1/2 pounds ground beef
1/2 pound ground pork sausage
1 cup chopped onion, about 1 large onion
1 cup chopped celery
1 bottle chili sauce (12 ounces)
1 can (8 ounces) tomato sauce
1 cup water
2 tablespoons prepared mustard
1 teaspoon seasoned salt
1/4 teaspoon ground black pepper
salt, to taste
8 hamburger buns, split and toasted

PREPARATION:
In a Dutch oven or large skillet, sauté sausage for about 4 to 5 minutes or until browned; remove to paper towels. Drain off excess grease and sauté ground beef for 4 to 5 minutes, until browned.
Remove ground beef to paper towels. Drain off all but a few teaspoons of the pan drippings; sauté onion and celery until soft. Return sausage and ground beef to pan; stir in chili sauce, tomato sauce, water, mustard, seasoned salt, and pepper. Simmer, uncovered, stirring frequently, for about 30 minutes, or until thickened. Taste and add salt if needed then serve sloppy Joe style saucy burgers over toasted rolls.


*Puff Pastry Mince Roll

ingredients
368 g/3 oz) packet frozen puff pastry
2 onions
1 small leek
350 g (12 oz) white cabbage
100 g (4 oz) mushrooms
450 g (1 lb) mixed minced meat
1 tablespoon butter
2 egg yolks
salt and freshly milled white pepper
1 teaspoon soy sauce
100 g (4 oz) Gouda cheese
1 egg, separated

method
1. Defrost the pastry. Dice the onions. Trim, wash and cut the leek into rings and the cabbage into fine strips.
2. Trim, wash and finely slice the mushrooms. Fry the onion and minced meat in the butter in a large frying pan. Add the vegetables and braise for 10 minutes, stirring frequently.
3. Remove the minced meat and vegetables from the heat and work in the egg yolks, salt and pepper and the soy sauce. Finely dice the cheese.
4. Roll out the pastry into a large rectangle and spread it with the meat mixture, leaving 2.5 cm (l in) pastry around the edges. Sprinkle with the cheese.
5. Brush the pastry edges with beaten egg white and roll up the pastry, pressing the edges lightly together.
6. Place the roll on a moist baking sheet and brush with egg yolk. Bake for 35 minutes in a moderately hot oven (200°C, 400°F, gas 6) and serve hot.


* Spanish Rice

1 cup long grain rice
1 pound lean ground beef
1/2 cup chopped onion
3 tablespoons vegetable oil or bacon drippings or combination
1 garlic clove, finely minced
1/2 green bell pepper -- chopped
2 cans (14.5 ounces each) stewed tomatoes, undrained and broken up
1 teaspoon salt
2 teaspoons chili powder

Wash rice and drain well; let dry.
Heat oil in heavy skillet over medium heat; add rice. Cook, stirring constantly, until lightly browned, about 10 minutes.
Add onions, garlic, green peppers and ground beef. Stir and break up meat; cook until onion is tender and lightly browned.
Add tomatoes and seasonings. Cover and simmer about 25 minutes or until rice is tender and most of the liquid has been absorbed. Let stand, covered, for about 5 minutes before serving.
Serves 4.

for the record, are you saying minched (chopped beef) or GROUND beef?

Chili, meatloaf, and vegetable beef soup.

Chili
Brown 1 lb ground/minced beef along with
one medium onion that has been diced.
Drain off fat once the meat is cooked completely.
Stir in 4-5 TBS mild Chili powder
1 TBS paprika
2 tsp cumin
salt and pepper to taste
You can also add hot sauce or cayenne pepper for more heat
Add 3-4 16 oz cans of beans I like a combination of 1 black bean, 2 red kidney beans and 1 navy or white bean.
and one can of tomato sauce. Cover and simmer for 20 minutes or longer. The longer is simmers the better. Right before serving stir in 1/4 cup of brown sugar. Serve over rice or a baked potato.

MEATBALLS CURRIED
1 lb. ground beef
2 tsp. curry powder
1/2 c. butter
Freshly ground black pepper
1 c. stuffing mix
Salt to season to taste
Mix beef, curry powder, stuffing mix, salt and pepper together. Shape into 32 small balls and sauté in butter over high heat for 5 minutes until brown. Drain.
Skip the curry if you wish and use mixed herbs.
You could also make this in a sauce pan if you don't want balls.

homemade burgers just squeeze the beef into patty shapes add seasoning and cook on the barbecue or grill them!
a pasta bake is also nice and can be tastier with mince in it.

Andrew's Spicy BBQ Burgers
30 min | 10 min prep | SERVES 6

Ingredients
2 lbs minced beef
2 medium red onion, finely diced
3 tablespoons garlic, minced
2 tablespoons spicy curry powder
2 tablespoons Worcestershire sauce
1 tablespoon cayenne pepper
1 teaspoon italian seasoning
1/2 teaspoon mustard powder
salt
freshly ground black pepper

Directions
1Mix all the ingredients together, using breadcrumbs if required, until the meat holds together well.
2Divide into four lumps then gently pack each burger into patties.
3Barbeque for 10-15 minutes or back in a 450F oven for 25 minutes until crispy.
4Serve in a bun with salad

Beef and Pasta Bake - the Best!
50 min | 20 min prep | SERVES 6

Ingredients
1 tablespoon olive oil
1 onion, chopped
2 garlic clove, chopped
2 slices bacon, fat removed and finely chopped
1 carrot, finely chopped
500 g minced beef (1 pound)
440 g condensed tomato soup (14oz)
1/3 cup tomato paste
1 tablespoon tomato sauce (ketchup)
1 teaspoon oregano
150 g spiral shaped pasta (uncooked)
1 cup grated cheddar cheese


Directions
1Preheat oven to 180 (350F).
2Heat oil in large pan; cook onion, garlic, bacon and carrot, stirring, til carrot is just tender - about 8 minutes *.
3Add mince and cook, stirring, til mince changes colour; then add undiluted soup, tomato paste, sauce and oregano and simmer, covered, about 15 mins or til mixture has thickened slightly.
4While beef mixture is simmering, cook pasta and drain. Stir pasta into beef mixture, then spoon into an oiled deep 8 cup capacity ovenproof dish and sprinkle with cheese. Bake, uncovered, for 15 mins or until browned slightly.
5*If you want to, you can add a stick of chopped celery along with the onion etc or add some mushrooms just before the mince.
