CUBED STEAK WORKS GREAT FOR "SWISS STEAK"
SIMPLY BROWN IT, THEN SIMMER IT FOR ABOUT 20 MINUTES IN A CAN OF CRUSHED TOMATOES AND A TEASPOON OF CHILI POWDER. TOSS A SLICED ONION IN THERE ALSO.
This is the absolute best!!!
California Steak and Potatoes
4 T. butter, 1 c. sliced onions, 4 cube steaks, 1/4 c. flour, 1 1/2 t. salt, 1/4 t. pepper,1/4 t. dry mustard, 2 c. buttermilk, 1 (2 oz) can mushrooms(I dont use, we dont like)2 T. chopped parsley(have used dry) 4 c. sliced russet potatoes.
In large skillet, melt butter and saute onions till tender. Remove onions from skillet, add flour,salt,pepper, and mustard. Remove from heat, graduling stir in buttermilk. Cook over medium heat, stirring constanly till thickened. Cook additional 2 minues, stir in mushrooms and parsely. In oiled 2 quart dish ( I use 11x13 pyrex) layer potates and onions and steak and then pour sauce over all. Cover with foil and bake in preheated 350 oven for 1 hr 15 min. or until potatoes are tender. 4 serving.
I promise, this is the best cube steak I have ever had. It is so, so tender. I also put my cube steak on the bottom to keep it from drying out.

You will love these My grandmothers recipe for breaded cube steaks. mix italian bread crumbs about 2 cups I prefer progresso. then mix in a 1/2 cup of grated parmesian cheese, 1 tablespoon of accent (msg), about 1/2 tbls of pepper, then break open a few eggs in a seperate bowl. dip the cube steaks in the egg first then dip in the other bowl of breading and apply heavy coat of breading. heat an ample amount of canola oil in a deep frying pan or fryer. make sure oil sizzles when you sprinkle water on it. fry the steaks for about 10 - 12 minutes or until medium brown or so . even if you overcook a little they will still be delicious. sprinkle some fresh lemon and eat. delicious. I usually cut the steaks in 2" by 4" strips or so everyone loves these throw one in a tortilla and go to town. some people like a little mayo. I like em plain with lemon . enjoy
I season mine really well then quickly brown them. Put them in a baking dish and top with some sliced raw onions and mushrooms. Make a nice sauce out of broth and a little corn starch and bake at 350 until done. Serve with smashed taters. YUM
Cube Steak Sandwich
2 to 3 pounds cube steak (tenderized round steak that’s been extra-tenderized
1 large onion OR 2 small/medium onions
4 French/Deli rolls
Butter, man
Lawry’s Seasoned Salt
Worcestershire Sauce
Tabasco
-Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.
-Slice cube steak against the grain. Season with Lawry’s.
-Heat 2 TBSP butter over high heat (in same skillet) until melted and beginning to brown.
-Add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides.
-Add 1/2 (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 TBSP butter. Add cooked onions. Stir to combine.
-Butter halved French rolls and brown on skillet.
-To assemble, lay bottom half of French roll on plate. Place meat mixture, followed by a spoonfull of juice from the pan. Top with other half of roll, cut in half, and devour!
