I need an easy vegetarian chili crock pot recipe!?!


Question: I'm headed to a potluck this weekend and committed to a vegetarian chili crock pot dish, excited about using my new crock pot and stoked about veggie chili. Unfortunately, I'm having a really hard time finding a good recipe!

I'm pretty cooking-illiterate, and would REALLY appreciate a recipe with, like, 6 items (not including spices). Most of the recipes I'm finding are HUGE lists of vegetables and complicated preparation.

Any tips, recipes, advice appreciated!

This might have a few too many ingredients for you, but it's really really easy, healthy, and yummy:

In a crock pot, add the following:
1 chopped onion
2-3 cloves of garlic, minced
1 chopped green bell pepper
1 chopped red bell pepper
3 cans of low sodium beans (any kind you want to)
1 can tomato paste (no salt added)
1 can diced tomatoes (no salt added)
1 cup frozen corn
1 package of chili seasoning (or make your own with sea salt, pepper, chili powder, cumin, cayenne pepper)
1 tablespoon of sugar
ground veggie crumbles (optional)
water to taste (add enough water to your desired thickness)
3 tablespoons of olive oil

Mix everything up and cook it down on high temperature for about 4-6 hours. This chili is delicious and sooo good for you, with all the veggies and beans.

use 6 can pinto beans
12 oz. green enchilada sauce
16 oz chopped green Chile, heat on low for at least 5 hours
or you can soak pinto beans over night and cook them, when they are done add the above
salt and pepper to taste

Easy Vegetarian Chili



1 15-oz can black beans, rinsed and drained
1 15-oz can white beans, rinsed and drained
1 1/2 tsp finely minced garlic
1 cup minced red onion
4 tsp chili powder
1/2 tsp salt
1/2 tsp cumin
1/8 tsp oregano
large pinch cayenne pepper
3 14.5-oz cans crushed tomatoes
6 tbsp snipped fresh cilantro
8 tbsp sour cream
8 tbsp grated Cheddar cheese

1. Combine all ingredients except sour cream and cheese in a crock pot; stir to combine.

2. Place on low heat and cook 6 to 8 Hours. (Of course, if your pressed for time, cooking on high heat for about 2 hours will also work.)

3. To serve, ladle into soup mugs and sprinkle each serving with Cheddar cheese and a dollop of sour cream, and garnish with fresh cilantro.

TIPS: Spices can be adjusted to taste. Use more or less cumin, chili powder, or cayenne to your liking.
