What is a good Cajun chicken recipe, and a good side dish for it?!


Question: 2 cups vegetable oil
2 tablespoons Cajun seasoning
2 tablespoons dried Italian-style seasoning
2 tablespoons lemon pepper
garlic powder to taste
10 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness


In a large shallow dish, mix the oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper. Place the chicken in the dish, and turn to coat with the mixture. Cover, and refrigerate for 1/2 hour.
Preheat the grill for high heat.
Lightly oil the grill grate. Drain chicken, and discard marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.


serve with a caeser salad

Cajun Chicken Pasta Recipe

4 ounces linguine pasta
2 boneless, skinless chicken breasts, cut into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter
1 thinly sliced green onion
1 to 2 cups heavy whipping cream
2 tablespoons chopped sun dried tomatoes.
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
grated Parmesan cheese


We have a restaurant in here. One of my favorite thing to order there is "Cajun Chicken Alfredo." I tried recreating it at home and came up with this recipe. Although it's not the same, it comes pretty darn close.

In a large pot with boiling water cook pasta until done then drain. Meanwhile, place chicken and Cajun seasoning in a bowl and toss to coat. In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes. Reduce heat and green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through. Pour over linguine and toss. Sprinkle with Parmesan cheese.

A side salad and a loaf of crusty bread for dipping would be good with it.\
