Just omit the nuts, crazy. He's just going to simply love the fact you are cooking for him! Dinner made with love....awwwwwwwwwwwwww!!!!!! Or at least I would love it! The only time my husband cooks is when we go out to eat, hahaahhahaa!!

Why not use bread crumbs, make a batter and drench the chicken in Italian seasoned bread crumbs.

Crush corn flakes and use that. Its really good and absorbs the flavor.

seeds is a good shout as well

What about sunflower seeds? I would try the panko (tempura) crumbs, that would be a great crunch!!

Crunchy Parmesan Chicken/Rachael Ray
1 cup cornflakes, lightly crushed
3/4 cup grated parmesan cheese
Salt and pepper
3 large eggs, beaten
Four 6-ounce skinless, boneless chicken breast halves
5 tablespoons extra-virgin olive oil
1 lemon, cut into wedgescheese
Preheat the oven to 350°. In a shallow bowl, combine the cornflakes, parmesan and 1/4 teaspoon each salt and pepper. Place the eggs in another shallow bowl. Coat each chicken breast with the cornflake mixture, then the eggs, then again with the cornflake mixture; transfer to a wax-paperlined baking sheet.
In a large nonstick skillet, heat the olive oil over medium-high heat. Add the chicken and cook, turning once, until golden, about 2 minutes per side. Transfer to a clean baking sheet. Bake the chicken until cooked through, about 10 minutes. Serve with the lemon wedges.

The breadcrumbs will make a crunchy texture, you don't have to add the nuts.

Toast some bread crumbs and substitute them for the nuts. Scrunch up some cornflakes.
Why choose a recipe when you don't want to use an essential part of the ingredients?
