Prepare ahead potatoes?!


Question: I'm making chicken nuggets for dinner tonight, and I'm going to be busy later this evening and I'm looking for some side dish ideas where I can prepare it ahead of time. Any suggestions?

I always make french fries with them (homemade), can I slice them now, put them in water then make them when ready? Or will they be too wet to cook then?

I've prepared these before and left them in the water well over the 10 minutes the recipe calls for and they turn out perfect every time. I also substitute the peanut oil with olive oil cooking spray. Spray the baking sheet and then the potatoes.

Roasted Oven Fries
Serves 3-4; Total prep time 1 hour, 20 minutes

Ingredients

* 3 russet potatoes (about 8 oz each), peeled, and cut lengthwise into 10-12 evenly sized wedges
* 5 tbsp peanut oil
* Salt and ground black pepper

1. Adjust oven rack to lowest position; heat oven to 475 degrees Fahrenheit. Place potatoes in a large bowl and cover with hot tap water; soak 10 minutes. Meanwhile, coat 18 by 12 inch heavy duty rimmed baking sheet (thinner sheets won't work as well) with 4 tablespoons oil and sprinkle evenly with about 3/4 teaspoon salt and 1/4 teaspoon pepper (this acts as ball bearings to help prevent potatoes from sticking so much). Set aside.

2. Drain potatoes. Spread potatoes out on a triple layer of paper towels and thoroughly pat dry with additional paper towels. Rinse and wipe out now empty bowl; return potatoes to bowl and toss with remaining 1 tablespoon oil. Arrange potatoes in a single layer on prepared baking sheet; cover tightly with foil and bake 5 minutes. Remove foil and continue to bake until bottoms of potatoes are spotty golden brown, 15 to 20 minutes, rotating baking sheet after 10 minutes. Using metal spatula and tongs, scrape to loosen potatoes from pan, then flip each wedge, keeping potatoes in a single layer. Continue baking until fries are golden and crisp, 5 to 15 minutes longer, rotating pan as needed if fries are browning unevenly.

3. Transfer fries to a second baking sheet lined with paper towels to drain. Season with additional salt and pepper to taste and serve.

No, you can do it that way--in fact, it is recommended that you let some of the starch soak out beofre frying potatoes. Just drain well and dry with a towel before cooking them.

Yes you can do that, but be sure you dry them on a paper towel. Too much water causes grease to pop.

Yes you can do that! Just dry the potatoes thoroughly before frying them! Sounds yummy!!! Another good idea would be some type of other protien and complex carbohydrate like...whole grain bread or whole grain coucous. Couscous is a grain that is SO easy to make...1 part water, 1 part grain, boil the water, add the couscous and turn the heat off. Let stand 5 minutes, and you're done. Add Olive Oil and chopped veggies or different seasonings to flavor it up! You can also slice up some veggie sticks with dressing or fresh fruit if you have any. Grapes, apples, oranges, etc. A quick side dish in my house is low-fat cottage cheese with spices mixed in (we like Lemon Pepper). This is all I can think of, anything will work! Now I'm getting hungry! LOL! Enjoy your dinner!

Yes you can, just use a clean towel (white, terry or linen) and drain then dry on towel...actually when you do the water bath, and dry on towel they are even better...a lot of resturants let them set for days that way before frying.........
