I'm cooking Salmon with a honey + pecan dressing. .. ?!
1. If the fillet is quite thick, should I leave it on low heat, and will that help it cook right through? and if so, it wont burn the outer of the salmon will it?
2. I'm a little worried that the honey + pecan glaze might be a little overpowering. I don't have much choice but to use this dressing, but is there a way to make it better? it consists mainly of honey and butter melted together, and pecans that have browned in the oven for a few minutes.
Answers: I'm going to be cooking an Atlantic Salmon fillet with a honey and pecan glaze.

Sounds absolutely Fantastic! I can only see two issues that I think you should be concerned with. If your Salmon Filets are quite thick, may I suggest cooking them on Medium Heat as apposed to a lower heat, this way you could sear the outside and maintain the natural juices of the fish on the inside. The sauce sounds mouthwatering as it is, you could always chop up the pecans and add so many other flavors here, but to keep it simple may I suggest some ginger and lemon? Simple additions to highlight your already fabulous sauce, lemon to add some acidity to your fish (and sauce) to cut the sweetness, lighten the flavors and ginger to enhance the flavors of the butter, salt and honey. cooking it slowly is the best way on a thick fish... But don't use butter it will burn and give a bad taste... Fish will have a white liquid coming out... flip it over for a minute then back remove from heat add a little very little of the sauce... serve the remaining sauce on side... a perfect meal eat well, be healthy...
Cook the salmon on medium heat about 4 mins a side if its a skin on filet cook the skin side more. Preheat your oven to 350 put your SAlmon in the oven in the frying pan with the glaze on top for about 2 mins. Honey will brown and burn quick so keep an eye on it. It should be a beautiful medium well salmon after that if you like it more well done just let it sit for 5 mins before you you put it in the oven.
let the salmon set in the dressing for at least 2hr then pan sear it turn down the heat don't over cook it. Heat dressing tell thick and but on top it will not over power it unless it is burned
