I am looking for unflavored gelatin recipes that are more of a side salad than dessert.?!


Question: Yeah, I know it sounds weird but I stumbled on a recipe that I made for Easter that actually was quite delicious and it got me to wondering about other possibilities. The recipe I made was a beet,onion, and horseradish "salad" and it went quite well with the ham though it would probably have worked better with a pork loin roast.

Green Goddess Gelatin Salad

1 (28 oz.) can crushed pineapple, drained, reserve juice
1 (8 oz.) pkg. cream cheese, softened
2 envelopes lime Jello
1 pint heavy whipping cream
2 tbs. cider vinegar

Place pineapple in large bowl; set aside. In meduim bowl, add Jello powder, 2 cups boiling water and stir until dissolved. Add 1 cup cold water and 1 cup reserved pineapple juice. Add vinegar. Let pre-set in freezer for a few minutes. With electric mixer, combine cream cheese and crushed pineapple. Add Jello mixture; mix until smooth. In separate bowl, whip the cream until it holds soft peaks. Gently fold whipped cream into Jello mixture. Transfer to a pretty bowl and refrigerate at least 4 hours or until set, preferably overnight.

Seafoam Salad

1 large can pear pieces, drain juice and save
2 (3 oz.) pkg. lime jello
1 8oz. cream cheese
4 T. milk
1 (9 oz.) carton Cool-Whip (or less)

Drain pears. Heat juice to boiling & pour over jello to dissolve. Cool until partially set. Combine cheese and milk. Beat til smooth. Stir in jello. Fold in pears and cool whip. Pour into 9x13, chill til set.

These types of salads were very popular in the 1950's. You can look for molded salads.

Molded Gazpacho
Ingredients:

* 1-1/2 Tbsp. unflavored gelatin
* 2 cups seasoned tomato vegetable juice
* 1 large tomato, seeded and chopped
* 1 cucumber, peeled, seeded, chopped
* 1 green bell pepper, seeded and chopped
* 2 Tbsp. diced green chilies
* 1/4 cup sliced green onions
* 1 clove garlic, minced
* 1/2 cup tiny cooked salad shrimp, if desired
* romaine leaves, rinsed and dried

Preparation:
In large bowl, soften gelatin in 1/4 cup of the tomato juice. Heat remaining juice until almost boiling and pour over gelatin mixture. Stir until gelatin is totally dissolved. Add vegetables and shrimp. Rinse a one quart mold or 9x9" square pan with cold water, then pour vegetable mixture into the mold. Cover and chill overnight. Unmold on a platter lined with romaine leaves or slice and serve on romaine lettuce leaves. 4-6 servings

Tomato Aspic Ring

1 quart tomato juice
1/3 cup finely diced onion
1/4 cup finely cut celery leaves
2 tbsp brown sugar
1 tsp salt
2 small bay leaves
4 whole cloves
2 tbsps unflavored gelatin
1/4 cup cold water
1 cup thinly sliced celery
crisp salad greens

for garnish: mayonnaise, avocado, and/or small bay (salad) shrimp

Combine tomato juice, onion, celery leaves, sugar, salt, bay leaves, and cloves in an enamel or glass saucepan. Simmer five minutes over medium heat. Strain.

Soften gelatin in cold water and stir into hot tomato mixture. Add lemon juice. Chill until partially set. Add celery. Stir gently.

Pour into lightly oiled 1 1/2 quart ring mold. Chill until firm. Unmold onto salad greens. Fill center with cold mayonnaise and/or with sliced avocado and shrimp.

I made a grapefruit jello and served it with grapefruit supremes, pomegranate seeds and avocado. It's really quite different.

And there are lots for tomato aspec with scallions, bell peppers, celery and sometimes shrimp.

I think these are much nicer than sweet jello.
