How about breakfast? We had breakfast for dinner at least once every few weeks growing up. It's quick, easy, and yummy!
Scrambled Eggs with Dill:
6 eggs, beaten
splash of milk
1 teaspoon dried dill
salt, pepper, garlic powder to taste
Combine all and scramble in skillet, about 5 minutes.
Garlic Butter Grits
1 cup quick cook grits
2 cups water
1 cup milk
2 teaspoons garlic powder
3 tablespoons butter
salt and pepper to taste
Bring the milk and water to a boil with the garlic powder and butter. Stir in the quick cook grits (also known as 5 minute grits). Cook 5 minutes, covered, stirring frequently. Remove from heat and add salt and pepper.
Add toast, bacon, and orange juice and you have a quick dinner!

Fruit Salad
1/2 cup chopped cashew nuts,almonds , lettuce
1 tbsp honey
3 tbsp white wine vinegar
1/3 cup olive oil
1 large large orange, peeled and sliced
1 large large pear, sliced thinly
1 large large red apple, sliced thinly
1. In a large bowl, combine sliced fruit.
2. In a small bowl, combine oil, vinegar, and honey.
3. Blend well.
4. Pour oil mixture over the fruit, tossing to coat well. Arrange fruit on 6 lettuce lined salad dishes.
5. Sprinkle each with a heaping teaspoon of chopped nuts.
Pepper and Onion Smothered Chicken Recipe
Cooking time about 25 mins.
6 T. balsamic vinegar
4 skinless, boneless chicken breast halves
3 t. olive oil
2 large onions, halved and thinly sliced
1 C. canned chicken broth
1 T. refined all-purpose flour
1 carrot, cut into thin strips
1 red bell pepper cut into thin strips
In a shallow glass or ceramic baking dish, pour vinegar over chicken breasts, turning to coat well. Set aside for 5 minutes.
Meanwhile, in a large skillet over medium heat, warm 2 teaspoons of the oil. Add the onions, cook, stirring occasionally until onions begin to brown.
In a grill pan or skillet, warm the remaining oil over medium-high heat. Drain the chicken and add to the pan, cooking about 5 minutes per side. While chicken cooks, add broth to onions, and cook until most of the liquid has evaporated. Stir in the flour, carrot, bell pepper, remaining 3 tablepoons vinegar, and cook until the pepper and onions are tender and caramelized, about 10 minutes.
Place the chicken on four plates. Spoon vegetables on top of chicken breasts.

vegetarian stir-fry
make 2 cups of brown rice.
take stir-fry veggies and grill them.
last of all, make your eggs (2) like you are going to make an omelette only don't fold, you're going to cut them into strips.
mix everything together. its the best!
Penne with Mushrooms
Salt
1 pound whole wheat penne
1/4 cup extra-virgin olive oil (EVOO)
4 ribs celery from the heart, chopped
1 onion, chopped
1 pound cremini mushrooms, quartered
1 cubanelle pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 large carrot, grated
4 cloves garlic, grated or finely chopped
1 bay leaf
Pepper
1 cup dry red wine
One 28-ounce can crushed tomatoes
2 cups chicken or vegetable broth
1 cup grated parmigiano-reggiano cheese, plus more to pass around the table
1/2 cup basil leaves, shredded
1. Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain and return the pasta to the pot.
2. While the pasta is working, in a large, deep skillet, heat the EVOO , 4 turns of the pan, over medium-high heat. Add the celery and onion and cook until softened, about 5 minutes. Add the mushrooms, peppers, carrot, garlic and bay leaf; season with salt and pepper and cook until tender, about 5 minutes. Stir in the wine and boil for 3 minutes. Stir in the tomatoes and chicken broth, lower the heat and simmer for 10 minutes.
3. Stir the 1 cup cheese and half of the sauce into the pasta. Serve in shallow bowls, topped with the remaining sauce and the basil. Pass extra cheese at the table.
**you can leave out the grated parmigiano-reggiano cheese if you need to

You want RACHEL RAY, whose show is " 30 MINUTES or LESS "...and you'll get alot of photos too. She'll have recipes for an entire meal in 30 minutes! ... Since chicken takes awhile to cook, I'd suggest that you boil up some larger chicken pieces (or boneless breasts); and take the cooked meat off the bones and refrigerate it. Then you'll have it ready for dishes later in the week, and will cut down on your cooking time....
WIKI WIKI CHICKEN SALAD
2 c. cubed, cooked chicken
1 c. pineapple chunks
1 c. seedless grapes, halved
1/2 c. slivered almonds, toasted
mayonnaise, salt & pepper to taste
lettuce leaves (to serve it on)
orange sections (or drained mandarin oranges) - garnish
COmbine all ingredients with enough mayonnaise to moisten; toss lightly.
Spaghetti Squash is simple... but probably not a good main dish.
Preheat Oven to 375
Cut the squash in half
Place face down into a baking pan that it about approximately 1/3 filled.
Bake until squash is tender.
Pull out of the oven and using a fork just pull the squash out of the middle. It comes out looking like spaghetti noodles.
I usually add butter and salt and can eat this all day long!
I sometimes add grilled chicken and sun dreid tomatos for a kick.
honey garlic chicken
get some boneless, skinless chicken pieces.
boil until done or almost done-maybe 15-20 minutes.
remove from pot and drain out water.
cut chicken into cube/bite size pieces, and put back into pot.
add a generous amount of honey to coat and some crushed fresh garlic....or garlic powder.
allow to simmer on low and let flavours blend.
meanwhile make some minute rice to serve chicken ontop of or on the side. and maybe a veggie of your choice or a salad.
other ideas-toasted westerns (omlettes)-
can add in whatever you like ie: onions, red pepper, mushrooms etc, and put into toasted sandwich. (i add mayo on mine-weird maybe but delicious)
-mushroom and or chicken fried rice. cook rice. put into skillet add pieces of cooked chicken if desired, and soya sauce, mushrooms and fold in and mix a beaten egg. add anything else you like-water chestnuts, green onions, bean sprouts, peppers etc.
-toasted tomato sandwiches with lettuce and mayo
-potato salad-cook potatoes, boil a couple eggs. chop eggs into cut up potatoes, add mayo salt and pepper to taste. chopped up celery is good in it too or a bit of celery salt.
-big plate of home made french fries could be a meal for me (lol)
