Mexican style beef casserole recipe

Recipe ingredients:

* 1 1/2 pounds lean ground beef
* 2 tablespoons vegetable oil
* 1 medium onion, chopped
* 1 cup chopped tomatoes or 1, 8 ounce, can tomato sauce
* 1/3 cup chile sauce
* Salt, to taste
* Freshly ground pepper, to taste
* 12 corn tortillas, cut into quarters
* 1/2 cup red taco sauce
* 3 cups shredded Monterey jack cheese
* 1 cup sour cream
* 2, 10 ounce, packages frozen chopped spinach, thawed and well drained

Recipe method:

* Preheat oven to 375 degrees F.
* In a large skillet brown the beef.
* Pour off any fat and remove beef. Set aside.
* Add oil to skillet and saute onion until limp and golden.
* Return beef to skillet and add tomatoes, chili sauce, salt and pepper.
* Dip tortilla quarters in taco sauce, covering both sides.
* Cover bottom of a buttered 3 quart casserole with half the tortilla pieces, slightly overlapping.
* Spread beef mixture over tortillas.
* Sprinkle beef with 1 1/2 cups of the cheese.
* Layer remaining tortilla pieces on top and spread with sour cream.
* Sprinkle on the spinach and top with remaining cheese.
* Bake, covered, for 30 minutes, uncovering for the last 15 minutes.
* If reheating, have the casserole at room temperature and bake at 375 degrees F, uncovered, until hot and bubbly.

1 box of pasta cooked (whatever you like)

mix together once both are drained

add 32 oz can of tomato sauce
1 can of tomato soup
then in casserole put a layer of mixture
then cur velvetta to cover layer
repeat until at top with cheese being the top layer completely covered

bake 375 for approx 35 minutes until golden brown on top

it will be a hit this is a family recipe i have had since i was little and love it

serve with a salad or a good bread

Tamale Pie
Main Dish Servings – 8

1 cup yellow corn meal
2 1/4 cup cold water with added chicken bouillon
1 lb lean ground beef
1 medium onion, chopped
1 large green pepper, chopped
4 tsp canola oil
3 tsp chili powder
2 cloves garlic, chopped
1 tsp salt
Dash of pepper
1 can (6 oz) tomato paste
1 can (10 oz ) Ro-Tel tomatoes
1 can (16 oz) kernel corn with juice
1 can (16 oz) dark red kidney beans

Preheat oven to 350*.
Combine cornmeal, water and chicken bouillon in a medium saucepan; whisk or stir constantly over medium heat until slightly thickened. Spread in a 9 X 13-inch baking pan, sprayed with no-stick cooking spray. Set aside.

In a large skillet, brown beef, onion, green pepper, and canola oil. Add chili powder, garlic, salt and pepper, and stir well. Add tomato paste, Ro-Tel, corn, and kidney beans, and mix well.
Spread mixture evenly over the cornbread mixture and top with 1 cup shredded soy or fat free cheddar cheese. (Or use real cheese and count the points.) Bake for 20-25 minutes at 350 degrees.
Variation: Spread ff refried beans over it and then put the chili type mix on that. Top with cheese (I don't do ff cheese) and bake again

This isn't Tex-Mex or a casserole, but I love this stuff.

It's called a Maid Rite, kind of like the ones that are famous in Missiori.

You brown the ground beef and add a can of Campbell's French Onion soup and a tablespoon of mustard, salt and pepper. Boil that down until it's the consistency of a sloppy joe. Eat it on hamburger buns. Sooooo Goooood!

World's Best Lasagna

INGREDIENTS

1 pound sweet Italian sausage
3/4 pound lean ground beef
1/2 cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
1/2 cup water
2 tablespoons white sugar
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fennel seeds
1 teaspoon Italian seasoning
1 tablespoon salt
1/4 teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 teaspoon salt
3/4 pound mozzarella cheese, sliced
3/4 cup grated Parmesan cheese


DIRECTIONS

In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
Preheat oven to 375 degrees F (190 degrees C).
To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

********OLD FASHIONED "BISCUIT TACOS"
2 cans biscuits
8 tbsp. flour
Open biscuits and press 2 biscuits together. Roll out in flour to 3/4 inch diameter. There should be 10 biscuits ready to fill.
FILLING:
2 lbs. ground beef
1/2 c. chopped onion
2 c. shredded cheddar cheese
Salt & pepper
Brown ground beef and onion, drain. Reduce heat. Add cheese to beef and stir until melted. Remove from heat. Heat 2 cups shortening. Fill biscuit shells with meat and cheese mixture. Fold in half moon and pinch together. Drop in hot grease and brown on each side.
SALAD MIXTURE:
1/2 head lettuce
1 tomato, diced
6 to 8 green onions, chopped (stems & all)
Toss salad mixture. Open biscuit taco and fill with salad mixture and favorite taco sauce. Serves 10. Absolutely delicious! Eat and enjoy!

******Beef Stroganoff Casserole

Ingredients
1 lb. Ground beef
1 can Cream of mushroom soup; condensed
8 oz. Sour cream
1 can (small) black olives; sliced
1 can (small) mushroom stems and pieces
12 oz. Egg noodles
Directions
Cook egg noodles according to directions and set aside. Cook ground beef until it is no longer pink. Drain off grease. Add soup, sour cream, olives, mushrooms, and noodles and cook until heated through.

Grandpa's Casserole
Line a baking dish w/ potatoes (you can use frozen hashbrowns or cut potatoes). Spray w/ pam & place in the oven which has been preheated to 350 degrees. Brown 1# of lean hamburger (you can add onions too if you like them), drain. Add 1 can of tomatoe soup, mix. Take out the baking dish & spoon the hamburger mixture over the top. Add frozen corn & bake till potatoes are done.
SOS
Brown 1 # lean hamburger, add onions, drain. Mix in 1 can of cream of mushroom soup (add as much milk as you'd like to thin it down) & green beans, salt & pepper. Toast some bread & spoon mixture over the top.
Taco Surprise
Brown 1 # lean hamburger, add onions, & drain. Add 1 can green chilis, taco season, canned diced tomatoes (drained) & 1 can pinto beans (drained). We usually just dish this up in a bowl & eat, but you can put over some tortilla chips.

Any and all of these are really great dinner idea's and most of them feed a lot of people, but you could never go wrong with shepherds pie!!

If you're looking for something easy, what about make-your-own tacos?

Just add the seasoning packet to the meat and some water, then get the taco shells at the store (Taco Bueno's are the best!) and then set out condiments: tomato, lettuce, shredded cheese, sour cream, picante and even cilantro or parsley if you want.

If you dont' have time to make guacamole, just chop a few avocados, sprinkle with lemon juice (and oil if you want), and serve alongside.

Tex -Mex , my kids favorite is tacos of course but there are many ways you can create the beef in our Mexican tradition.
original is ,
steam the ground beef , break it up until its not in big chunks . Add 1 spoon full of garlic and a 2 dashes of pepper mix until done and add a little salt. That's the original way .
The different way is - do the same as on top but this time add 1/2 spoon cumin . But before you add all the spices ,
chop up 1/2 onion , 2 jalapenos , 1 tomato , add it with the meat when brown then add the spices. when your mixing it all up , add in a 1/2 cup of flour until it all blends together , use a can of tomato sauce and add a glass of water and you will see it thicken and as soon as you leave it almost 15 minutes taste it and its called canre guisada (only this is w/ ground beef) originally carne guisada is made w/ chuck stew meat. But , hey know you have a way to use it twice. Let me know how it turners out. BEST OF LUCK,
