What are some quick and easy recipes for a one-person meal?!
Answers: the only good thing i know how to cook is eggs. well eggs are gettin old so i want some really simple recipes. but i live by myself so i dont want to have a lot of food left over.
take a chicken breast
cut into bite size pieces
add to hot oil and saute'
add some chopped onion and sliced mushrooms
saute' about 5 min.
add 1/4 cup red wine
1/4 cup Beef broth
simmer 30 min.
serve over rice, egg noodles or mashed potatoes
***I would make extra you will want enough for another meal. It freezes well.
I make up my own stuff for afternoon tea, not really lunch, breaky or dinner. But try maple cyrup, chocolate spread & mashed-up biscuits all mixed together. It's so nice!
Always make a few meals, there's no point to make just one, just throw it in the fridge. My friend has a cookbook called the 4 ingredient cook book. Highly recommended, he can't cook either. Super simple recipes, and always just 4 things in the mix.
A Begal Sandwich
Mac & Cheese— The easy microwavable packs for single servings. There is also Hamburger Helper single serve packets as well now.
Pasta Sides (from Lipton).. they're a dollar a piece, cook in about 6-10 minutes and serve about 2 people, so you may have a bit of a leftover, but enough to eat for the next day!
Steak-Umms are also good, you can make your own cheese-steak or do steak & gravy over white rice.
You can still cook like you're not living by yourself but just freeze the leftovers so that they'll last longer, that's what I do, even though I am not living alone, we often have leftovers.

Pasta is always good. You can make a lot and reheat it. Great with pesto, or alfredo sauce, or just butter and cheese.
I also have a quesadilla maker which is such an amazing invention. Basically anything you have on hand can become a quesadilla if you have tortillas!
Also a big fan of: grilled cheese, or any kind of wrap (again easy to make with anything you have)
