Doctoring Vanilla box Cupcake Recipe?!
1 package plain white cake mix
1 cup sour cream
1/2 cup vegtable oil
3 large eggs
1 tsp vanilla extract
I want to add a package of vanilla instant pudding
and do applesauce in place of oil....
What do you think?? Will this produce a light moist fluffy cake?

make sure that the cake mix doesn't already have pudding mix in it, before you add it. And, adding pudding and applesauce will make it very moist, but heavier.... The sour cream will already make it moist. If you want it light, then just beat the batter for 3-5 min. Most people don't beat it long enough (you'll notice a definite difference in the texture after 3 min).....
I think the applesauce is fine but the pudding mix will make it a moist dense cake and not fluffly. If you want it to be fluffy you can just whip it till the batter is fluffy or separate the eggs and add the yolks and then whip the whites until they are peaks and fold them into the batter, this will make it fluffy and light.
beat the eggs till nice and fluffy than add to your batter. I haven't used applesauce but i know oil adds moisture to a cake
I still add the pudding mix even if there is pudding in the cake mix. It does produce a bit denser of a cake, but it is so moist!!!!
But I can't tell ya about using applesauce instead of oil, I have never done that.
