kind of depends on what kind of omelet you like. western. eastern, me i like to add maybe a quarter cup of milk, whip it, pour it it a teflon pan, that is sprayed with pam, cover it with cheese a healthy proportion of ham chunks cut small, maybe a sprinkle of finely diced onions, if avaialable and you like them try some finely diced green peppers as well, cook and serve. Dang now i am hungry, thanks....lol, enjoy

you didn't mention what type omelet you are making, english, french, thick, thin. But some good general additions are; sauted mushrooms, diced onions, shredded cheese, pepperoni, diced ham, brocolli florets, chopped roast beef, lemon yogurt (at the end before folding) crisp bacon crumbled intro small pieces, black olives, green olives, chili, jelly, chopped asparagus, corned beef, gee, just about anything will fill an omelet, that's why they are so versitile. Chunks of smoked gouda and sliced peeled apples are great in an omelet.

Andouille sausage, portabella mushrooms and a little chopped garlic.

sautee some fresh spinach, mushrooms, ham and onions in olive oil, add a little salt. it's the best!

Im mexican and wat i put in my omelets is chorizo, and chopped onions, and jalapenos. eat it wit a flour totilla.

or another with "carne seca" ( dried beef) onions, jalapenos.

I make omelets for dinner whenever I clean out my refrigerator! I use up whatever kind of veggies or leftovers look like they're not going to last too much longer. Sometimes I saute whatever the filling is in butter before I throw it into the egg, and other times I just toss things in raw.

Last time I made omelets, I used chopped broccoli and some shredded cheddar cheese. The time before that, I think it was olives and mozzarella. My daughter loves to make omelets with (yuck) *beans* in the middle.

In short, anything goes!

I like dill and mushrooms in mine.

Omelettes can be made with anything you like, I really mean anything too, from asparagus to zucchini, any kind of chopped meat with any kind of sauce or cheese. You can even make a plain omelette, cut it into thin strips and toss it over a dinner salad or into a bowl of soup. Top it with some sour cream and salsa or brown gravy, depending on your taste.

Add a little more water and a pinch of flour to the egg mix and you have a basic crepe batter, which you can fill with everything from chocolate or fruit to cream cheese or meat.

A dash of Tabasco sauce, chopped green onions and salt and pepper whisked together with the eggs. When the omelet is almost cooked you can add some yummy cheese such as cheddar. You can also add sauteed vegetables such as mushrooms, then fold it and let it cook a bit more so everything is hot. Another option is to put black beans and salsa with cheddar in the folded omelet.

Cheese, Scallions, Mushrooms, Spinach, Artichokes are all my favorites.

When you whisk your eggs use a splash of water or milk to make them fluffier. I like to make eggs Benedict omelets. I use cheese, Canadian Bacon, fresh basil leaves, spinach, tomato, cheese and a bit of Hollandaise sauce. Sometimes I put in asparagus with it. It's good!

Sliced mushrooms and shredded gruyere cheese inside the omelet. Sliced avacado on top.

My favorite is: Cheddar cheese, pepper jack cheese, ham, tomatoes, sauteed mushrooms, olives. I usually cover with chunky salsa and a few drops of Tabasco sauce with a side of cottage cheese. Unless sausage gravy is available.
