I need a good fish recipie.....?!


Question: My hubby wants fried fish for dinner tonight. I will probably get cod or some other similar white fish. He wants it to be battered but, I don't know what ingrediants to batter it in. I don't really want to do a beer batter(not really fond of beer myself). Are their any good batters that don't use beer? Also I want it to be really crispy.

I do not care for beer either but "do" usually use a dark beer in the batter which really does make it nicer and you can't taste the beer. However, I don't always feel like buying beer just for fish and have used this recipe that calls for seltzer water instead...and that I always have on hand. Also, I prefer flounder or bass and have used those fish as well as the haddock or cod.

Vegetable oil, for deep frying
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
I also add some old bay seasoning
1 large egg, lightly beaten
1 can (12-ounce size) soda water
1/2 cup corn starch for dredging
2 cod or haddock fillets, cut in half on an angle

Mix all ingredients except oil and corn starch, adding soda water last and whisk smooth. Dredge the fish in the corn starch and then dip in batter. Fry in oil at 375 degrees. You may have to adjust the amount of oil in the pan depending on the size of the pan. You want enough oil so that it totally covers the fish.
Great served with a bottle of malt vinegar, tartar sauce and cocktail sauce.

You should be able to find fish breader in the grocery store, it would be with the corn meal and flour and things. Mostly though, its just corn meal with some seasoning in it. Its best to fry fish in peanut oil. Hope this helps!

I've never fried cod, but I love to make/eat fried flounder, catfish, or tilapia. I might have to make some cod and try it!

You can use ice water instead of beer if you really want it battered. I prefer white fish (catfish or flounder) coated with a mixture of corn meal and corn starch. Get yer oil hot, 350F or so, and fry the filets until lightly golden. Take them up and drain them on paper towel and allow to cool a bit. Now here's where the crispy comes in, it's a Chinese trick. Just before plating, drop the filets back in the hot oil to fry the second time. Fish will be crispy on the outside and juicy on the inside.

Use some flour mixed with bubbly water and egg, maybe with a little baking powder, if you like (then you need to add a little milk to activate the baking powder (you need acid). Or just take a beer recipe and replace the beer with bubbly water and a little lemon juice.

Crispy Batter for Fish
20 min | 5 min prep | SERVES 4

Ingredients
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup water
400 g cod fish fillet

Directions
1Mix ingredients together.
2Dip cod into batter.
3Deep fry at 425F until cooked

The best way {i think} to cook fish is only with lemon and garlic, simple and healthy. For a battered recipe, try one in the seasoning isle at the market. They have some wonderful recipes.

Depends on what kind of batter you like. You can use cornmeal, buttermilk and egg. Or flour, buttermilk and egg. Or a little of both. Most people here in the south use corn meal, a small touch of flour, egg, buttermilk and maybe some cayenne pepper. You can actually buy a batter mix from the store, but they are usually very salty.

I like mine lightly battered, so, I normally just roll it around in plain cornmeal, letting the moisture from the fish bond with the cornmeal, and pan fry in a touch of olive oil.

Here is a few that we use:

1 1/2 cups instant mashed potato flakes, dash salt
1 egg mixed with 2 Tbs. mustard
Dip in egg mixture and then potato mixture; fry.

Italian seasoned breadcrumbs, 1 egg mixed with 1 Tbs. milk

Lemon Pepper Blend:
1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 tablespoon lemon pepper

Cajun:
1 cup dry potato flakes
1/2 cup all-purpose flour
1-1/2 teaspoons garlic powder
1-1/2 teaspoons seasoning salt (or Tony Sacheres)
1-1/2 teaspoons ground black pepper
1 teaspoon cayenne pepper, or to taste

2 cups buttermilk
2 cups cornmeal
salt and pepper

Shake cornmeal , salt and pepper in large ziplock bag. Heat oil to 360*. Dip fish in buttermilk then put in with dry ingredients and coat both sides well. Deep fry until golden

Try a mild White Fish (flounder, roughy, etc.). Take store bought breadcrumbs, mix in grated cheese & Ital. herbs. Dust the fillets and press in with the seasoned crumbs (no need for egg) and saute in EVOO until crisp. Do in small batches to avoid splattering. Keep warm in oven until ready to eat. (after breading, fillets can be baked as well).

First put the fish in a plate of milk, then in seasoned bread crumbs, ( I recommend Contandina) then in eggs. This will make it crispy.

I like to fry the fish in tempura batter. It's nice and light and flaky.

Tempura Batter

INGREDIENTS:

* 1 egg
* 1 cup ice water
* 1 cup all purpose flour

PREPARATION:
Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to overmix the batter.
