Chinese Sweet & Sour.................

Chicken & Apple Fajitas

Ingredients

450 g (1lb brambly apples peeled, cored and thickly sliced
Juice of 1 lime
1 tbsps oil
2 medium onions thickly sliced
2 gloves garlic, finely chopped
1 – 2 red chillies, deseeded and finely chopped
1 tsp coriander
1tsp cumin
450 g (1 lb) chicken fillets cut into thick strips
Seasoning
1 tbsps fresh coriander, chopped
8 wheat tortillas

Method:

1. cut each apple slice in half and put in a bowl with the lime juice and toss together
2. heat the oil in a large frying pan, add onion and cook over a high heat for 2 mins, add garlic, chillies, spices and chicken then fry stirring for about 5 minutes until chicken is golden. Lift chicken out of the pan and set aside
3. Add apple with lime juice and 5 tbsps of water to the pan and cook with the onions for 3 minutes.
4. Return the chicken to the pan and continue to cook for a further 5 minutes, until apples are tender but still hold their shape
5. Heat the tortillas as directed on the pack. The quickest way is to transfer them to a plate, cover with film and microwave on high for 20 – 30 secs
6. Season filling with salt and pepper, then add fresh coriander.
7. To serve, place 2 heaped tbsps of filling in each tortilla, roll up and enjoy!

A Chinese chicken dish, literally translated as "wind sand chicken". The chicken is coated and cooked in traditional soya sauce for flavour. Then, it is fried so that only the skin becomes crispy, and the meat is still tender. Large amounts of fried garlic is used to cover the chicken. It's very tasty

get a whole chicken, put it into a pan it fits in with high sides and a lid. fill the bottom of the pan with water just above the back take butter and wipe it allover the chicken. take veggies put it into the pan. onion juice for flavor. ( you can do this by grading it )get some bacon that has allot of fat on it and lay it across the Brest and inside of it. seasoning as you see fit IE lemon pepper works best. then cover it and put it into the oven bake it at 350 until done about 45 min to 1hr.

Grilled, on charcoal grill with mesquite briquettes, boneless, skinless chicken breast. Best if you grill and then let set. Put in zip lock bag with the juices and leave in frig overnight. Next day, heat and serve, it brings out the smokey taste and it's sweet with the mesquite flavor!!!

sunday dinner (roast dinner) mmm

COLA CHICKEN
1 family size package chicken wings
2 cup catsup
2 - 12oz. can cola (pepsi, coke, etc.)
2- packages McCormicks Buffalo wings seasoning

Put chicken in a non-stick pan.
Mix together catsup and cola, seasoning….pour over chicken.
Bring to a boil.
Reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking...to prevent from
sticking to pan)
Cook until the sauce becomes thick and adheres to the chicken.

It turns into the most incredible BBQ sauce. Yummmm!

I used the spices from a MILD (I don't care for "HOT") Buffalo
Wings packet...(the kind you get to bake in the oven).....I thought it
was really good.....(but you/I can't find a 'bad' way to fix chicken).

This recipe is doubled…..for my husband and myself…I use ? the ingredients.

You can double…the double….and more as you like.

BBQ Ribs

Use the same method….leave out McCormicks seasoning.

Ribs & Chicken wings both good…..and……‘s I m p l e’…..to fix…!!

chicken quesadillas are super yummy! But I love my own homemade chicken recipe...Marinate breasts in a little italian dressing all day...Place in a pan (I cover in foil to eliminate mess!), draining off most of the juices/italian dressing. Drizzle with 1-2 Tbs of lemon juice, then sprinkle with basil & oregano. Cook @ 375 for about 30-45 minutes, until chicken is cooked thoroughly....delish & low fat!

Fried chicken, it doesn't get any better than that!!

beer batter chicken tenders:

boneless skinless chicken tenders (or breasts cut into strips)
1 cup bisquick mix
1 egg beaten
1/2 cup beer
spices to your liking (seasoning salt, garlic powder, black pepper)
oil heated for deep frying

mix egg and beer then add the bisquick and seasonings. stir until batter is smooth. dip chicken in batter and drop (carefully) into hot oil. fry until batter is golden brown and chicken is done inside.

chicken tetrazzini:

1-2 boneless skinless chicken breast cut into cubes
1 can cream of chicken soup
8oz sour cream
1 small chopped onion
1 small can sliced mushrooms
3oz spaghetti cooked til al dente
parmesan cheese
butter

heat oven to 325. saute the chicken and onion in a little butter until the chicken is no longer pink inside. stir in the mushrooms, soup, and sour cream until blended well. stir in the cooked spaghetti until coated with sauce. pour into a buttered casserole dish and sprinkle the top with parmesan cheese. bake for 30-40 minutes.

chicken fajitas:

boneless skinless chicken breast cut into thin strips (it is much easier to cut the chicken when it is slightly frozen)
sliced sweet onions
sliced green peppers (or any color sweet pepper)
shredded cheddar cheese
sour cream
salsa or taco sauce
flour tortillas
italian dressing

place chicken strips in a bowl and pour on italian dressing just to coat. place covered in refrigerator overnite to marinate (the onions and peppers may also be marinated with the chicken but is not necessary). in skillet saute the chicken, onions, and peppers until done (no need to add oil to the skillet as there is oil in the italian dressing). spoon mixture onto tortillas and add cheese, sour cream and salsa. to fold the tortilla; first fold up the bottom then the sides. ENJOY!!!!

My fiance calls it "beat chicken". For 2 people, I take 2 boneless skinless chicken breasts. I put in a 1/2 gallon zip lock bag zipped somewhat shut but not all the way (to let air out) and I use the flat side of a meat tenderizer mallot to pound each one thin. I melt butter in a large frying pan--about 3 tablespoons. I lightly season each side of the flattened chicken breasts with McCormick's Montreal Steak Seasoning and cook them in the butter in the pan--about 5 or 6 minutes on each side till niceley golden. Then I make a noodle side dish and a veggie.
