Answers: how do you make meatballs, i was thinking of making it with spagetti, and meatballs etc but how do you make them and does anyone know any yummy recipies thanx
SAUCE
1 cup chopped onion
1/2 cup chopped green pepper
1/4 cup chopped celery
2 cloves garlic, minced
1 Tbl. oil
(2) 14.5 cans diced tomatoes, undrained
(1) 6oz. can tomato paste
2 Tbl. parsley (fresh or dried)
1 Tbl. fresh basil or 1 tsp. of dried basil, crushed
2 tsp fresh marjoram or !/2 tsp. dried marjoram, crushed
1 tsp. sugar
Cook onion, pepper, celery and garlic in hot oil over medium heat until tender. Stir in tomato, tomato paste, dried herds (if using), sugar, 1/2 tsp. salt and 1/4 tsp pepper. Bring to a boil;reduce heat. Simmer, covered 30 min. Uncover and simmer 10-15 min more. Stir in fresh herbs, if using.
Meatballs
In large bowl, combine;
1 egg
3/4 cup soft bread crumbs(1slice)
1/4 cup finely diced onion
1/4 cup finely chopped green pepper
1/4 tsp dried oregano, crushed
1/4 tsp salt
1lb. hamburger or bulk pork sausage
mix well. Shape into 24 meatballs. Arrange meatballs in a 15x10x1 baking pan. bake at 350* for 15-20 minutes or until done. Drain. Stir into sauce .
take some hamburger meat and some breading and a couple eggs just to moisten it up and then mix it all together and cook them in a pan on the stove
Good old lean mince beef.
If you like onion add a 1/2 minced onion per Lb in weight.
If you like bread crumbs grate a slice into the mix.
Bind together with a couple of eggs.
Add chopped basil or any herb you like at this stage! To your taste of course.
Trick leave to stand for about ten mins.......... and mix again before flouring your hands and roiling into balls the size you like!
The works just as well for beefburgers.
Tip;
If you are Veggie Quorn mince works exactly the same!!!
I like to fry them in hot chili oil or garlic oil and add to a passata mix onto of fresh pasta.
You can make your usual tomato based ragout sauce ad then plop the meatballs in to cook.
Another tip you can put the sauce and meatballs into a slow cooker at this stage and have it later in the day.
Another tip: make one slightly larger than the rest and when you think they are cooked always test this one - if it is coked they all will be cooked!- This is my dogs treat too - they have 1/2 of this meatball each!
Easy Spaghetti And Meatballs Recipe
Ready in: < 30 minutes
Serves/Makes: 4
Ingredients:
1 pound ground beef
2 tablespoons water
1/3 cup seasoned dry bread crumbs
1 egg, beaten
1 jar (28 oz size) pasta sauce
4 cups hot cooked spaghetti
Directions:
Mix beef, water, bread crumbs, and egg. Shape meat mixture into 12 (2 inch) meatballs. Arrange in a single layer in a 2-qt shallow microwave-safe baking dish.
Microwave on high 5 minutes or until meatballs are no longer pink (160 F). Pour pasta sauce over meatballs. Cover and microwave 3 minutes more or until sauce is hot. Serve over spaghetti.

Dried thyme
Salt & Pepper
Beaten Egg
OR
Minced Lean Pork
Minced Onion

Fresh breadcrumbs

Put all ingredients in a bowl and mix well, with wet hands roll small amounts into balls and fry in a little oil until sealed, add to sauce of your choice to finish cooking

here is my version...
1lb ground beef 80% lean + 1/2 lb ground Itilan sauage
1/2 cup bread crumbs
salt & peper
1 teaspoon cumin
1 teaspoon basil
1 egg
mix all indreginents in a bowl
form into ball , hat ever size you want...
brown in a frying pan then add to sauce to finish cooking...
Eat well, Eat healthy...

Meatballs are so cheap al;ready made, in the frozen section. I think like 3 dollars.
But....If you are like me, and have your mind set to making something, use a favorite meatloaf recipe, roll it into balls, and you can either fry or bake them.
Yum! You are making me hungry!
Easy Basic Meatballs:
1 lb. ground beef
1 egg
1/3 cup milk
2 handfuls of bread crumbs, cracker crumbs, or crushed cornflakes
1/2 small onion chopped
1 clove garlic minced
1/2 tsp salt
Couple dashes of pepper
Mix and roll into small balls and put on sheet pan. Bake at 350 degrees for 20 minutes.
I use probably about 1/2-3/4 cup of breadcrumbs to 2 cups of lean ground beef, then FINELY mince in a few cloves of garlic and an onion, add dried herbs eg. basil, oregano, add a bit of salt and a fair bit of black pepper. Sometimes I add chilli powder. Mix it all together then break an egg or two into it, just enough to make it stick together (one bonus for me of meatballs is how cheap they are, stretching meat, so adding lots of egg would negate that). And, most importantly, I bake them on a rack (bulk of the fat drips away) - the texture is way nicer than if they're pan-fried. While they're cooking, saute another onion and a few more heads of garlic in olive oil until onion is transparent, then add various herbs to match what I've put in the meatballs, a tablespoon of tomato paste, and a tin of chopped peeled tomatoes. Salt and pepper to taste, stir and mash to mix thoroughly and simmer until pasta and meatballs are cooked. If you want the sauce a bit runnier add stock or water or wine. Once everything's cooked, either toss them all together, or serve a pile of spaghetti with meatballs on top and sauce splodged over the lot, and don't forget the parmesan cheese.
On top of spaghetti,

I have gotten lazy in my old age, & now instead of meatballs I often add seasonings to the meat & brown, then add to the sauce in that state.. It cooks a lot faster & taste fine..
I just use sausages and take the meat outta them, shape them, add herbs ( i like a bit of chilli flakes) maybe a bit of parmesan, yum, then quickly cook them in a nice tomato sauce. :) x x

use a mixture of beef and pork mince, mix with breadcrumbs and salt pepper and nutmeg and egg yolk, mix well and make into balls, fry in pan
2 parts ground/mince beef + 1 part ground/mince pork
[i.e. 2 lbs beef + 1 lb pork]
The following additions are based on 2lbs beef + 1 lb pork:
In a bowl place 3 slices bread; add just enough milk to soak bread so that it easily becomes mushy with a fork. To this add 1 TBSP dried oregano, 1 small onion finely chopped (optional), 1 tsp salt, 1/4 tsp fresh ground pepper, 1 lightly beaten egg (just enough to blend yolk and white before adding to bread/herb mixture). Stir with a fork to blend the bread/milk/seasonings/egg. Add this mixture to the ground meat and mix thoroughly. Test for seasoning by cooking a small amount of the mixture quickly in a little oil and tasting. Add more salt, pepper or whatever you feel necessary to give them a good flavour. When I was growing up, my Italian dad use to insist we included 1/4 cup of grated Parmesan cheese right in the meatballs.
Once completely satisfied with the flavours; form meatballs as large or small as you prefer - about the size of a large walnut or just a bit smaller than a scoop of ice-cream is a good size (if you like, use a scoop to help make the equal sized!).
Roll them in the palm of your hand then brown in a small amount of oil in a frying pan. You have a choice now; you can either fry them until completely cooked - or - fry all the surface of the meat then add them to your sauce which is simmering on low in a large cooking pot. Once you've added all of them, the sauce is to continue to simmer on low for another hour to allow the flavours to meld and cook the meatballs fully. This step needs to be on a low simmer so the sauce doesn't boil too vigorously and cause the meatballs to break apart because they aren't fully cooked when you added them - this can also be done by placing the sauce/meatballs into the oven at 325f (gas mark 3) for 1 1/2 - 2 hours.
If you've cooked the meatballs fully in the frying pan them simply add them to your prepared sauce and enjoy!

Crusty meatball pasta
Serves 4

Cooking time 10 to 30 mins
I think meatballs should be coated in a smooth sauce, which is why I've opted for passata, which is just sieved tomatoes. If you've got canned plum tomatoes, just liquidise two cans and use them instead. Any lean mince would be fine for this recipe too.
Ingredients
700g/1lb 8oz jar passata
2 tsp dark muscovado sugar
1 lemon, grated rind and juice only
2 garlic cloves, roughly chopped
1 red chilli, de-seeded and roughly chopped
small bunch of parsley, roughly chopped
75g/3oz crustless white bread
250g/9oz lean minced pork
1 egg
300g/11oz pasta shapes, such as spirals or penne
2 tbsp freshly grated parmesan
salt and freshly ground black pepper
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Place the passata, sugar and lemon juice in a pan and heat gently.
2. Meanwhile, place the garlic, chilli, parsley and lemon rind in a food processor and blend until finely chopped. Add the bread and blend to make crumbs. Finally add the mince, egg and some salt and pepper and pulse briefly until well blended - take care not to overblend or the mixture will lose its texture.
3. Shape the mixture into 20 small balls and drop them into the passata sauce. Simmer gently for 20 minutes.
4. Meanwhile, cook the pasta in a pan of boiling salted water according to packet instructions.
5. Drain the pasta, toss with the meatball sauce then turn into a heatproof dish. Scatter over the parmesan and a good grinding of black pepper and bake for 20 minutes until the top is crusty and golden. Serve.
you need ground beef/chicken/turkey/pork ( 500grms this is enough for 10/15 balls) an onion, small cup of breadcrumbs, 2/3 cloves of garlic, and some fresh cilantro (corriander) 2 eggs.
Mix meat finely chopped onion, garlic, cilantro, breadcrumbs,and eggs altogether, roll into balls and cook slowly in spaghetti sauce. You can also make this into burgers as a change. Nice..........
