Recommend me something for dinner I am out of ideas completely and bored with what we normally have?!
Answers: I do not like Macaroni, beans or sweet food so bear that in mind!!
Try this:
Thai Halibut with Garlic-Chili sauce
1 halibut steak
-------
Sauce
Juice of 1 lime
A little lime peel from the lime, minced
1 Tbsp. minced Garlic
1 Tbsp. minced Ginger
1-2 Tbsp. Thai Chili-Garlic sauce and/or Crushed Red Pepper Flakes (Thai Dragon if you can get it)
1 Sweet Basil leaf, minced
4 Tbsp. Fish Sauce or Soy Sauce
3 Tbsp. sugar
Dressings
----------------------
Handful of Bean Sprouts, rinsed
2 sliced scallions
2 Sweet Basil Leaves, julienned
A few sprigs of cilantro
1 In a non-stick pan, put all sauce ingredients. Bring to a simmer.
2 Put in fish. Cook 1 side 1 minute and the other side 1 minute.
3 Dress fish with dressings.
Plate and serve with jasmine rice.
Eat.
throw some veg and cream and onion into a blender and have soup with bread! =)
Steak Kabobs and Wild Rice with Mushrooms
1 pound boneless beef round tip steak, cut 1 inch thick
1/2 small red onion, cut into 3/4-inch wedges
1 small yellow summer squash, cut lengthwise in half then crosswise into 1 inch slices
1 small red or green bell pepper, cut into 1-inch pieces
Marinade:
2 tablespoons water
2 tablespoons coarse-grain Dijon-style mustard
2 tablespoons red wine vinegar
2 large cloves garlic, minced
2 teaspoons vegetable oil
1/2 teaspoon coarse grind black pepper
2 teaspoons vegetable oil
2 cups thinly sliced mixed mushrooms such as cremini or shiitake
1 package (6 ounces) wild rice blend
Cut beef steak into 1-1/4-inch pieces. Combine marinade ingredients. Place beef and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
Heat 2 teaspoons oil large nonstick skillet over medium heat until hot. Add mushrooms; cook and stir until tender. Remove and keep warm. Meanwhile cook rice according to package directions, omitting salt and butter. When rice is done, stir in mushrooms.
Soak eight 9-inch bamboo skewers in water 10 minutes; drain. Remove beef from marinade; discard marinade. Alternately thread beef, onion and squash evenly onto skewers. Place on grid over medium, ash-covered coals. Grill, uncovered, 8 to 10 minutes for medium rare to medium doneness, turning occasionally.
Serve kabobs over wild rice.
Makes 4 servings.

Apple chicken
2 chicken breasts
salt
oil
2 tsp. minced garlic
1 C chopped apple
3/4 C apple juice
Salt each side of the chicken and brown on a skillet for about 4 minutes on each side. Remove and keep warm. Sautee the garlic and apples in the oil. Add the apple juice and let simmer for a few minutes. Place the chicken in a baking pan and pour in the apple mix. Bake for 30-40 minutes at 375 turning chicken over halfway through cooking time.

Poor man's steak - Really good and healthy, slice Portebello mushroom really thick and grill like a steak. You can add balsamic vinegar or even steak sauce. Goes good with any kind of potatoes...

Broiled fish, just season with lemon-pepper and some fresh dill.

something simple I make -
cook up some pasta (with this you can add mized herbs and/or garlic pepper or whatever)
Add to it either ham or Bacon.
Also you can add cheese on the top if you like it, the cheese will melt and taste lovely ^^
I usually make this for lunch but I guess it'd word for a nice small dinner if you arn't too hungry
Here's one of my recipes.
Cook 1 pound ground beef, seasoning with garlic salt,onion powder, and chopped onion, and cooking in a skillet on medium heat until browned. Meanwhile, Boil elbow macaroni until they're fully cooked, then drain and place in large mixing bowl. Place the finished ground beef in the large mixing bowl along with the elbow macaroni. Add 1 jar Hunts Beef Gravy (you can use some other brand or canned gravy also, but it should be beef gravy!), half of a can of stewed tomatoes, and mix very well. Then, sprinkle shredded sharp cheddar cheese all over and serve hot. It's unique and delicious; it's also simple.

16 oz box of spaghetti pasta
soy sauce, enough to color pasta
1/2 cup broccoli
dash of ginger
2 or 3 boneless chicken Brest(depending on size)
cook pasta fallowing directions while you cut chicken in to bit sized pieces, cook in a pan with tow teaspoons of oil to help it not stick, add some soy sauce to color and taste,and dash of ginger(very strong, so be careful) then I prefer to use frozen broccoli,(zap it in the microwave only a few seconds at a time till it is thawed, has a steamed consistency to it) then when all ingredients are finished drain pasta and return it to the same pot you cooked it in then add everything together and add soy sauce and stir, hope you like it as much as we do, you can also add other vegetables like water cashews and such but my kids like it simple

4 or 5 Green onions (chopped finely)
? LB Sliced Mushrooms or 1 4-oz. cans of sliced mushrooms
1 can Whole Clams
? Pint Heavy Cream
Garlic Salt
Pepper
8-oz. Linguine Pasta
Cook Linguine according to package directions.
Sauté onions and mushrooms in butter. Add clams and cream. Continue to cook over medium-low to medium heat until thickened.
You can substitute frozen shrimp for the clams and it is just as good.
Or perhaps you'd like some Chimichangas?
Baked Chimichangas
1 Pound Ground Beef
1 Small onion, finely chopped (about ? cup)
1 TBS Red Wine Vinegar
1 tsp Ground Red Chilies
? tsp Ground Cinnamon
1/8 tsp Ground Cloves
1 can (4 ounces) Chopped Green Chilies, undrained
1 Medium Tomato, Chopped (about ? cup)
8 Flour Tortillas (10 inches is diameter) warmed
1 Egg, Beaten
2 TBS margarine or Butter, softened
Salsa, if desired
Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in vinegar, ground red chilies, cinnamon, cloves, green chilies, and tomato. Heat to boiling; reduce heat. Simmer uncovered 20 minutes, stirring occasionally.
Heat oven to 500 degrees. Spoon about ? cup of the beef mixture onto the center of each tortilla. Fold the bottom end of tortilla up about 1 inch over beef mixture: fold right and left sides over folded end, overlapping. Fold remaining end down; brush edges with egg to seal. Brush each chimichanga with margarine or butter.
Place seam sides down in ungreased jelly roll pan, 15 ? x 10 ? x 1 inch. Bake uncovered 8 to 10 minutes or until tortillas begin to brown and the filling is hot. Serve with Salsa, and a side of frijoles refritos and arroz Espanola.

Ingredients:
One whole chicken, minus giblets or two Cornish game hens
3 fluid ounces (6 TBS) light cooking oil
4 fluid ounces (half cup) clear heather honey
Salt and pepper (freshly ground black pepper if you have it)
3 ounces (6 TBS) Grainy mustard
Half teaspoon curry powder
One clove chopped garlic
Method:
Place the chicken in an oven-proof casserole dish. Mix all the other ingredients together and pour over the chicken. Cover the dish and cook in a pre-heated oven at 375*F (190* C or Gas Mark 4 for folks on the metric system, and Britons) for an hour. Baste the chicken thoroughly with the juices and sauce and return to the oven for another half hour uncovered. The chicken will brown as a result. Serve with boiled or creamed/mashed potatoes and fresh vegetables, or on a bed of rice.
(This has become one of my favorite chicken recipes. I cooked it on TV, and we served it at a Board of Trustees Dinner to rave reviews. Editor)

1.5 cups chicken broth (ready to serve kind)

1/4 c pimento stuffed olives, sliced
2 tsp capers, rinsed and drained
sprinkle chicken w/salt & pepper, heat oil in pan over medium high heat, add chicken, cook 4 minutes on each side, or until lightly browned, then remove and set aside. add onion, bell pepper and garlic to pan, cook until vegetables are just tender, add rice and stir to coat w/drippings, add cumin and tumeric, tomatoes, jalapeno and chicken broth. bring it all to a boil, place chicken over rice, reduce heat to a simmer and cook 25 minutes or until rice is tender and all liquid absorbed. sprinkle the remaining ingredients over the chicken, turn off heat, cover and let stand for 10 minutes. this is some kinda GOOD

2 pounds boneless steak, 1 inch thick
1 clove garlic, cut
? cup flour
2 teaspoons salt
1 tablespoon paprika
1 medium onion, thinly sliced
1 cup sliced mushrooms, fresh preferred but canned will do
3 tablespoons extra virgin olive oil
? cup water
1 cup sour cream
freshly ground black pepper to taste
Cut the steak into 4 serving pieces and rub sides and edges with cut side of garlic.
Mix flour, salt, and paprika together and pound into steaks using a meat-tenderizing mallet.
Brown onions and mushrooms in a heavy skillet (I like to add a few cloves of minced garlic), using olive oil.
Add steaks, browning quickly on both sides.
Add water, cover skillet, and cook over low heat ? hour or until tender. Turn meat at least once and more often at the your discretion.
Pour sour cream over steaks, simmer for 10 minutes, sprinkle with freshly ground black pepper, and serve
Use round, top round, chuck or flank steak for this dish and save the boneless ribeyes for grilling. For less well-done steaks, shorten cooking time. A meat thermometer might help. Serve rice or pasta along side the steak, the gravy/sauce is great, especially on rice. LMH
If you are in something of a hurry, you can make a good Alfredo Sauce. It is good plain, or with sauteed chicken, shrimp, or beef added.
Fast Alfredo

1 - 8-ounce package Cream Cheese
? Cup (3 oz.) Grated Parmesan Cheese
? Cup Butter or Margarine
? Cup Milk
8 oz. Fettuccini, cooked and drained
In a large saucepan, stir together cream cheese, Parmesan Cheese, butter and milk over low heat until smooth.
Add cooked Fettuccini; toss lightly.
4 Servings
(As a variation, before making the Alfredo Sauce, cut up boneless chicken, pork or beef into bite-sized portions. You may also use frozen shrimp. Season it with salt and pepper, then sauté in butter or olive oil until done. Remove the meat from the heat and make the sauce. Just before adding the Fettuccini, add the meat or shrimp to the sauce, stirring until it is reheated. LMH )

hrm.....I don't know if you're into spicy things.....like tamales...i made some came out great.....how about shrimp cocktail? or make what I call "caldo de pesacado" Fish soup.....potatoes, carrots, onions, salt and a tooth of garlic, and add what you like of seafood like shrimp and catfish.....and the cilagtro (sp) gives it more flavor....it's simple yet very good especially with chips....=]

Cajun Fried Chicken or Pork
4-5 boneless chicken breasts, boneless pork chops
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
? cup water
1 – 1 ? cups oil, for frying
Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.
Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.
Heat vegetable oil in large skillet on medium high heat.
Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.
Serving Suggestions:
Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.
Chicken and Sausage Jambalaya
5 to 6 hot links (or other hot sausages), cut into bite size pieces
4 to 5 boneless chicken breasts, cut into bite size pieces
garlic salt
pepper
1 tbs butter
1 cup chopped onion
? cup chopped celery
1 tsp minced garlic
2 cups white or brown minute rice
2 cups canned low sodium chicken broth
Place sausages in large deep pot with water to a depth of about 1 inch. Cook over medium-high heat until water boils away, about 10 minutes. Continue cooking the sausages until lightly brown. Remove sausages with slotted spoon and set aside.
Salt and pepper chicken pieces. Add butter to pan and cook over medium heat until browned, about 5 minutes. Remove chicken and set aside.
Add onion and celery to pot and sauté them until they are soft, about 5 minutes. Add the garlic and chicken broth, bring to a boil, reduce heat to low and cover. Simmer for about 10-15 minutes. Add reserved sausage and chicken, stir. Makes 4-5 servings.
Spicy Cajun Grilled Shrimp, Fish, Pork, or Chicken
1/3 cup soy sauce or Kikoman Teriyaki Marinade
? cup virgin olive oil
1 to 5 tbs cajun seasoning mix (without salt), depending on how hot you like it
? cup sesame oil
? cup fresh lemon juice
2 tbs fresh ginger
2 tsp dry mustard
2 tsp tabasco
32 large fresh uncooked shrimp (no shells, with or without tails and de-veined)
Bamboo skewers (1 for about 5 shrimp)
Add shrimp to marinade for 20-30 minutes. Soak skewers in water. When shrimp is ready put on skewers and barbeque on high heat for about 2 minutes per side.
This is an excellent marinade for fish and chicken, you can cook whole and omit the skewers and grill or make kabobs.
Don Joses’s Beef, Shrimp, or Chicken Fajitas
Marinade:
1 clove garlic, minced
2 tbs corn oil
1 tbs lemon or lime juice
1 tbs worcestershire sauce
dash of salt and pepper
4-5 boneless chicken breasts, cut in strips, 2 lbs beef sirloin cut in strips or 1 ? lbs of
shrimp, shelled and de-veined
1 tbs corn oil 1 large onion, sliced
1 green bell pepper, thinly sliced
1 red or yellow bell pepper, thinly sliced
12 small flour tortillas, heated
Combine all ingredients in the marinade together in a plastic container or zip lock bag, mix. Add chicken to coat. Marinade for at least 15 minutes, turning several times. Add oil to large skillet and heat on medium-high. Add chicken and saute until brown. Add onion and bell pepper and saute until cooked but slightly crisp. Serve on tortillas. Garnish with sour cream and shredded Cheddar or Jack cheese.
