Mirin is a rice wine what is sweeter then saki and used almost excusively for cooking.

Your sauce sounds like it would taste similar to teriyaki sauce as these are the main ingredients (in fact they are often the only ingredients along with sugar or honey).

The easiest way would simply combine soy sauce, mirin, and sugar (if your going for teriyaki) to taste and cook down to desired consistency. If your feeling adventuresome you might throw in a little fresh ginger or garlic in for the added flavor (this is purely up to personal taste and a purist will have nothing to do with it).

Soy Sauce is made out of soybeans, of course. This one usually is preferred or used for flavoring fried rice, stir-fried vegetables and even for coloring for its dark brown color. It tastes salty. You can buy the reduced-salt kind because the flavor is as good as the salty one. There are different types of soy sauce and depending on the thickness, they originate from different Asian countries like Japan and China.
