Mom's Favorite White Cake
2-1/4cups cake flour
1tablespoon baking powder
1/2teaspoon salt
1/2cup butter, softened
1-1/2cups sugar
4egg whites
2teaspoons vanilla
1cup milk
Strawberry Frosting (recipe follows)
Fruit Filling (recipe follows)
Fresh strawberries (optional)
Preheat oven to 350°F. Line bottoms of two 9-inch round cake pans with waxed paper; lightly grease paper. Combine flour, baking powder and salt in medium bowl; set aside.
Beat butter and sugar in large bowl with electric mixer at medium speed until light and fluffy. Add egg whites, two at a time, beating well after each addition. Add vanilla; beat until blended. With electric mixer at low speed, add flour mixture alternately with milk, beating well after each addition. Pour batter evenly into prepared pans. Bake 25 minutes or until wooden toothpick inserted into centers comes out clean. Cool layers in pans on wire rack 10 minutes. Loosen edges and invert layers onto rack to cool completely.
Prepare Strawberry Frosting and Fruit Filling. To fill and frost cake, place one layer on cake plate; spread top with Fruit Filling. Place second layer over filling. Frost top and sides with Strawberry Frosting. Place strawberries on top of cake, if desired. Refrigerate; allow cake to stand at room temperature 15 minutes before serving.
Strawberry Frosting
2envelopes (1.3 ounces each) whipped topping mix
2/3cup milk
1cup (6 ounces) white chocolate chips, melted
1/4cup strawberry jam
Beat whipped topping mix and milk in medium bowl with electric mixer at low speed until blended. Beat at high speed 4 minutes until topping thickens and forms peaks. With mixer at low speed, beat melted chocolate into topping. Add jam; beat until blended. Chill 15 minutes or until spreading consistency.
nfd?
Why not both? :-) Use chocolate icing with strawberries on it.
I think vanilla is tasty with strawberry
Both...it sounds good!
Gabriella, go to grocery store and get a yellow cake mix and a container of chocolate frosting. Follow the directions on the box.
This is the simplest, fastest, cheapest and best way to go.
Regards,
Dan
If you want a "from scratch" cake recipe, email me and I will send you one. Mix is easier.
Both sound great to me, does he like lemon? It's just a suggestion but vanilla and lemon with chocolate icing are great cakes.
Strawberry Cream Cake Filling
2 cups hulled strawberry, crushed
1/2 cup sugar
1 tablespoon unflavored gelatin
2 tablespoons cold water
3 tablespoons boiling water
1/2 cup whipping cream
--Add sugar to strawberries and set aside. Soften gelatin in cold water, then add boiling water and stir until gelatin is dissolved. Stir gelatin mixture into strawberries and allow to cool. Whip cream until stiff. Fold whipped cream into strawberries when it (the strawberry mixture) is the consistency of heavy syrup. Refrigerate until set.
Use this to fill the cake and frost with a simple vanilla icing. Sounds delicious, have fun and enjoy!
Vanilla Cake w/Strawberry
1 Vanilla Cake -- see below for recipe
Strawberry Filling
4 pints (2 l) fresh strawberries
1/3 cup (3/4 dl) sugar
Vanilla Custard
2 cups (5 dl) milk
5 egg yolks
1 vanilla bean, cut in two lengthwise
2 tablespoons corn starch
1/2 cup dark rum
2 cups (5 dl) heavy cream (for decoration)
This is how you do it
Carefully cut the spongecake into three horizontal layers.
Strawberries
Save half of the strawberries for decoration. Cut the other half of the strawberries in small cubes -- an put in a bowl. Mix in the sugar og let it rest until the sugar has dissolved. It should become a little sirupy.
Vanilla Custard
Bring the milk, with the vanilla bean added, to a boil. Whisk the egg yolks with the sugar and corn starch. Add 1 tablespoon of water if the mixture becomes too thick. Remove the vanilla bean and then pour the milk over the egg mixture and whisk brisklyl. Pour the mixture back into the pot. Gently reheat the mixture and continue whisking until it becomes a thick cream. Pour the cream through a sieve and let cool. Whip 2/3 cup of the heavy cream and fold it in the custard.
Spread half of the vanilla custard and then half of the strawberry filling on the bottom layer of the sponge cake. Place the second layer on top of this and press gently. Repeat the above process before placing the last layer of sponge cake on top.
Tip! If you have extra time on your hands, you may cover the cake in plastic wrap and place it in the refrigerator for 24 hours before decorating. This will give the flavours time to settle a bit and will make a great cake even better!
For serving
Whip the remaining cream. Use a pastry bag with a spout to decorate, working it in an upward movement all around the cake. To crown the work add the remaining strawberries on top.

you could try and be different and chop up the strawberries into tiny pieces and put them in the cake or coat those thoe tiny peices of strawberries with chocolate and put them inside the cake.
you could also put chocolate iceing on top of the cake and put the strawberries on top.

chocolate
your best bet is to get a normal box mix if you want and make a three tower cake. you have three different round cakes that are about an inch thick, and in between them you put filling. You can put strawberry AND chocolate so then you don't have to choose.
Ingredients
1 (18.25 ounce) package yellow cake mix
1 (3 ounce) package strawberry Jell-O
3 tablespoons all-purpose flour
1/2 cup water
2/3 cup vegetable oil
4 eggs
1 (10 ounce) package frozen strawberries
1/2 cup butter
4 3/4 cups confectioners sugar
Directions:
1.Preheat oven to 350 degrees.
2.Grease and flour three 9 inch round pans.
3.In a large bowl, stir together cake mix, Jell-O mix and flour.
4.Make a well in the center and pour in water, oil, and eggs.
5.Stir in half of the container of strawberries and beat on low speed until blended.
6.Scrape bowl, and beat 4 minutes on medium speed.
7.Pour batter into prepared pans.
8.Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
9.In a large bowl combine butter, confectioners sugar and the remaining half of the frozen strawberries.
10.Beat on high speed until creamy.
11.Add more sugar, if needed. This frosting can become too liquidy, if you're not careful. (But still delicious.)
