Anyone have a recipe for German potato salad?!

*******GERMAN POTATO SALAD
1 1/2 to 2 lbs. bacon
3 1/2 lbs. potatoes, boiled & peeled
1 1/2 c. chopped onions
1/4 c. all-purpose flour
1/4 c. sugar
1 1/2 c. water
1/4 c. cider vinegar
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 c. light cream
In a large skillet cook bacon until crisp. Drain, reserving 3 tablespoons drippings, crumble bacon. In a large bowl toss bacon with potatoes and onions. In the drippings combine flour and sugar. Combine water, vinegar and salt and pepper. Stir in skillet, cook and stir until thickened and bubbly. Stir in cream. Pour over potato mixture, toss gently to coat. Serve warm.

This is my Daughter Latasha’s recipe. She is living in Germany and got this from her German Mother-in-law.

*********TEXAS COUNTRY POTATO SALAD


4 c. cubed cooked potatoes
1 c. chopped celery
3 chopped hard cooked eggs
? cup. Chopped red onion
? cup. dill pickle relish
2 tbsp. chopped parsley
2 tbsp. chopped pimento

Dressing:
1 qt. Miracle Whip
1/2 c. sugar
1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)


Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.

you have to cook the potatoes in water and after that cut it like the chips, cook some eggs and also slice them and add some sliced onion and maionese and here you go!

German Potato Salad

Ingredients

3 cups red potato, diced
6 slices bacon
1 small onion, diced
2 tablespoons water
1/4 cup white vinegar
3 tablespoons sugar
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon parsley

Directions

1. Place the potatoes in a pot, with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, set aside to cool.

2. Place the bacon in a large deep skillet over medium-high heat. Cook until browned and crisp. Remove and set aside.

3. Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add potatoes and parsley. Crumble half the bacon into the mix. Heat through, transfer to a serving dish. Crumble the remaining bacon over the top and serve warm.

*Traditional German Potato Salad

Ingredients:
2-1/2pounds red potatoes
1/4pound bacon, cut into small pieces
1/2medium onion, finely chopped
1/2cup cider vinegar
1/4cup water
1tablespoon plus 1 teaspoon sugar
1teaspoon salt
1teaspoon brown mustard seeds
1teaspoon mustard
2tablespoons finely chopped fresh parsley
1teaspoon paprika

Preparation:
1.Place potatoes in large saucepan. Add enough water to cover. Bring to a boil over high heat. Reduce heat and simmer, uncovered, 20 to 30 minutes or until potatoes are fork-tender. Drain. Let potatoes cool. Peel potatoes and cut into 1/4-inch pieces; set aside.
2.Cook bacon in medium skillet over medium heat until crisp. Remove with slotted spoon. Crumble into small bowl; set aside.
3.Cook and stir onion in 3 tablespoons bacon drippings until tender.
4.Combine vinegar, water, sugar, salt, mustard seeds and mustard in large bowl. Add potatoes and bacon; toss until well coated. Garnish with parsley. Sprinkle with paprika. Serve hot or cold.

German Potato Salad

6 Potatoes, medium
1/4 c Onion, chopped
1/2 c Bacon, chopped
1/4 c Cider vinegar
Salt to taste
Pepper to taste

Boil potatoes with salt in water until soft. Fry bacon until crisp. Save
1/4 cup bacon grease. While potatoes are warm cut into cubes Mix potatoes,
onions, salt and pepper in a bowl. To the frying pan add the grease, and vinegar, the potato mixture and mix.

Variation: use green onions (I prefer these)
: increase the vinegar
: increase the onions
: increase bacon

SOMETIMES I leave out the bacon and just use canola oil.
