GRANOLA BARS
1/2 c. soft butter
3/4 c. brown sugar
1/3 c. corn syrup
1 egg
1/2 tsp. vanilla
3 1/2 c. quick oatmeal
1 c. chocolate chips
Heat oven to 350 degrees. Grease a 9 x 13 inch pan. Beat butter, sugar, and syrup until light and fluffy. Blend in egg and vanilla. Add and mix oats and chips. Press firmly into pan. Bake 20 to 23 minutes. Cool a couple hours. Cut.

DATE AND RAISIN GRANOLA BARS
3 c. oatmeal
1 c. Vita Fiber
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 c. raisins
3/4 chopped pitted dates
3/4 c. evaporated skim milk
6 tbsp. honey
3 egg whites
1/2 c. sugar
Preheat oven to 350 degrees. Spray a 9 inch square baking pan with Pam or Baker's Joy.
In a mixing bowl, with a fork or whisk, blend oatmeal, Vita Fiber, baking soda, cinnamon, raisins, and dates. In a small bowl, combine milk and honey.
Beat egg whites until almost stiff. Slowly, about 1/4 cup at a time, add the sugar to the whites and continue to beat until stiff and glossy.
Stir the liquid ingredients into the dry ones. Fold half the egg whites into the oatmeal batter to lightly and moisten it, then add the other half. Spoon the batter into the prepared baking pan, and bake for 35 minutes or until a toothpick, when inserted into the center of the batter, comes out dry. It will be easier to cut this into squares if you let the granola bars set overnight at room temperature.
Alton Brown had a good one on his show, Good Eats. You can find the recipe on foodnetwork.com. My husband loves them, they have too much sunflower seeds for my taste.
Chewiest Granola Bars
1 c Brown sugar
1/2 c Light corn syrup
1/2 c Vegetable margarine
2/3 c Peanut butter
2 ts Vanilla extract
1/2 c Sunflower seed
3 c Quick oats
1/2 c Coconut, grated
1/3 c Wheat germ
1/2 c Raisins
1 c Carob chips
1 c Other nuts or dried fruit
(You can substitute 1-1/2 c crisped rice for 1-1/2 c of the oats.)
Preheat the oven to 350 degrees F. Coat the inside of a glass 9x12 baking dish
with light vegetable oil. In a large bowl, combine the sugar, corn syrup,
vegetable margarine, peanut butter and vanilla extract, and stir well to
the consistency of a paste. Stir in remaining ingredients and work the
mixture so that several large clumps adhere together. Using your fingers,
press the mixture into the baking dish. Bake at 350 degrees for 15-20
minutes until the preparation turns golden brown. Allow to cool
completely before cutting into bars.
Chewy Granola Bar
INGREDIENTS
4 1/2 cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
2/3 cup butter, softened
1/2 cup honey
1/3 cup packed brown sugar
2 cups miniature semisweet chocolate chips
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.
