Follow the other recipes as they seem fine - I would reiterate the point that getting the fat in the tray nice and hot before adding the batter and keeping the oven hot are two MAJOR points.

Also - resist the temptation to open the over while they are cooking to get a look, as the rush of cold air can make them deflate mid way through the cooking process.

one final tip - if your yorkshires still dont rise? Take an egg white and whisk it until light and fluffy like you were making meringue (no sugar) then gently fold the whisked egg white into your mix with a large metal spoon. Dont beat the mix of you will lose the air. You should then find they rise (sometimes spectacularly) if they didnt before.

Ingredients for 12:
3 eggs
250ml of milk
150g (5oz) plain flour

Method:

1.Pre heat the oven to gas mark 7
2.Add flour to bowl, leave a hole in the middle
3.Crack the eggs into the bowl one by one
4.Using a whisk beat the milk into the eggs
5.Put butter into each muffin hole
6.Half fill the muffin holes with Yorkshire pudding mix,
keep in the oven for 18-20 mins

Yorkshire Pudding
? cup of bacon dripping
? cup milk
1 egg, well-beaten
? cup sifted all-purpose flour
? teaspoon salt

Temp: 450o F Time: 10 - 15 min. I use a glass pie plate so if you also do, turn the heat down to 425°F.


Tip
One tasty and cooking trick - save in a mug in the fridge drained off bacon drippings to use in this recipe - also for that super taste in English Roast Potatoes!


Now combine well-beaten egg and milk; beat till light. Gradually beat in sifted flour and salt; beat with dover beater till smooth. Let stand 30 minutes. (I personally don't bother with this letting stand 30 minutes step.)

Put the bacon dripping into an 8"x8" baking pan or divided up between 6 large muffin tins. Heat in oven, make sure you watch pan as it will start to smoke! Pour batter into hot pan; bake in hot over till done. Serves 4.

The trick is the hot fat and the hot oven. Don't keep opening the oven to check. Serve immediately as it will deflate as it gets cold. Pour nice beef gravy over top. Or you can use "Yorkies" with chicken.

2. Grease a Yorkshire pudding tin with a little vegetable oil. Place the tin in the oven to preheat.
3. Place the milk, eggs and seasoning in a bowl. Stir well to combine.
4. Whisk in the flour.
5. Remove the tin from the oven. Pour in the batter, filling each case only three quarters full.
6. Place the tin in the oven and bake for 10 minutes, or until puffy and raised.
7. Remove the puddings from the oven and serve.

you can also use muffin tins.

3 tablespoons of plain flour, pinch of salt, 1 egg, mix with milk to make a thin batter, leave to stand or cool in the fridge, heat some oil in the tins till smoking hot, and pour batter in bake on number 5-6 for 20 mins, leave till well risen

Plain flour and milk,
Whisk together untill you get a nice creamy-ness about it
Dash of salt
The tray you are going to cook them on should have blob of lard put on it.
Then put it in the oven untill the lard is very very hot.
Bring out the tray and put the mix in.
Back in the oven and keep an eye on it untill it has risen.
