Here's a gorgeous recipe to treat yourself!!

Here we go:(This recipe is for about 4 breasts,but you could adjust , depending on the quantity you need to cook or the size of the portions)

Pound breast a bit with a mallet(or a rolling pin!), to flatten.
Cut each one in half.
Dredge with flour.
Keep aside.

1 eggplant(aurbegine)Slice into thickish rounds and cook on oiled grill till golden.

*I do it on my George Foreman grill but an ordinary skillet will also do or you could just pop them in to a hot oven after drizzling with some oil.*

Chop an onion.
Slice about 8 button mushrooms(white)

Heat 1 - 2 tablespoons of butter or oil

Add in 1 chopped onion,cook for 3 mins until just 'pink'.

Add in 1 full teaspoon of black mustard seeds

Throw in the mushrooms along with 1 teaspoon of ground garlic.
(If you feeling brave,you could put in 1 teaspoon of ground green chili or just leave it out.)

Cook for a little while ,then throw in floured chicken breasts.Add salt to taste and a grinding of black pepper.
Cook till chicken is well coated with the other ingredients and LIGHTLY browned.

Pour in 1 tub (250-300ml fresh cream) and mix till thickened a bit.Turn off heat.
Layer chicken with sauce , top with eggplant slices,repeat until all is used up.Sprinkle cheese on top and put into a hot oven to melt cheese.

Serve with a tossed salad and some home made chips.
Maybe some bread as well to mop up the sauce!

Brown some ground beef with some chopped onion, drain.
Make a box of mac & cheese as directed, then stir in the ground beef and some cooked frozen peas.

You could make meatloaf, smashed potatoes and a veggie; chicken with pasta or rice and a veggie; spaghetti with a tossed salad, garlic bread and a nice wine; chili with corn bread; stew with biscuits; soup with fresh bread; pizza...

Baked Chicken Breasts

Marinate chicken in breasts in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

Cherry glazed chicken breasts:

1 can cherry pie filling
4-6 boneless chicken breasts

Heat oven to 350 degrees F. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam. Spoon just enough of the cherry pie filling over the chicken to cover lightly. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 30 minutes. Serve with rice or potatoes - either smashed or baked - and a steamed green veggie such as broccoli, peas or whole green beans or corn.

This is very easy and you get a nice moist chicken breast. This also works well for Cornish game hens or pork chops.

Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Chili
Prep: 15 minutes
Cook: 20 minutes

Ingredients
1 pound lean ground beef
1 pound smoked sausage
1/2 cup chopped green sweet pepper (1 small)
1/2 cup chopped onion (1 medium)
4 cloves garlic, minced
2 15-ounce cans tomato sauce
2 15-ounce cans red kidney beans, undrained
2 15-ounce cans spicy chili beans, undrained
2 14.5-ounce cans diced tomatoes, undrained
1 package McCormick chili seasoning - or chili seasoning of your choice
4 to 6 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon dried basil, crushed
1/4 teaspoon ground black pepper
Shredded cheddar cheese (optional)
Chopped onion (optional)
Dairy sour cream (optional)
Crushed red pepper (optional)

Directions
1. In a 3-quart saucepan cook and stir ground beef, smoked sausage, chopped green pepper, chopped onion and the garlic over medium heat until meat is brown and onion is tender. Drain off fat.

2. Stir in tomato sauce, undrained beans, undrained tomatoes, chili powder, salt, basil, and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. To serve, ladle chili into bowls. If desired, top each serving with cheese, chopped onion, and/or sour cream and pass crushed red pepper. Makes 8 main-dish servings.

3. Chili for Four: Prepare as above, except divide all ingredients in half.

4. Cincinnati-Style Chili: Prepare as above, except omit sweet pepper, basil, and optional garnishes. Add 1 to 2 tablespoons unsweetened cocoa powder, 1 tablespoon cider vinegar, 1 teaspoon Worcestershire sauce, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, 1/2 teaspoon ground cumin, and 1/4 teaspoon cayenne pepper with the tomato sauce. To serve, place 1/2 cup hot cooked spaghetti on each of 4 serving plates; make an indentation in center of each portion. Top each serving with some of the chili, 1 to 2 tablespoons shredded cheddar cheese, 1 to 2 tablespoons chopped onion, and/or 1/4 cup additional kidney beans.

Spread refried beans on a plate, sprinkle with cheese and microwave for 1 minute, spread with sour cream and top with salsa. Use tortilla chips to scoop and eat.

How about a good portion of ham and some sliced potatoes,with some onions and garlic mixed in for flavor? It will make you feel full for a long time and cooks in 15-25 mins.
