Baked Macaroni and Cheese

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup Panko* bread crumbs
* Panko is a Japanese bread crumb – Substitute plain or Italian if desired.
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a sauté pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Stove Top Mac and Cheese

6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.
You get a box and read the instructions! It's on every single one of them.
Boil the macaroni. Mix up the cheese sauce with the margarine and the milk, and then mix the sauce and pasta together. The amounts are slightly different from brand to brand, so please get those from the box.
Of course, in my house, thin slices of hotdog are thrown in the water with the macaroni while it's cooking. They heat up nicely there, and then you mix everything else just like the box says to do. It makes a fun polka-dot mac and cheese.

cheese sauce
3 T Butter (or marg)
3 2 T flour
2 cups milk
1 1/2 cup-2 cups grated cheese
melt butter over low heat ...add flour ...stir to make a paste...add milk slowly ....when milk is hot add cheese 1/2 Cup at a time until desired consistency
16 ounces macaroni (uncooked)
1 cup margarine or butter
1/2 cup all-purpose flour
4 cups milk
18 ounces Velveeta cheese, cut into chunks
salt and pepper
8 slices Velveeta cheese
Preheat oven to 350 degrees.
Cook macaroni according to directions and drain.
Melt margarine in a large saucepan.
Add flour and whisk together.
Whisk in milk and cook over medium heat until mixture starts to bubble and thickens.
Stir constantly.
Add chunks of Velveeta and allow to melt.
Salt and pepper to taste.
Pour macaroni into a 13x9 oblong baking dish.
Pour sauce over macaroni.
Bake in the oven for 20 minutes, then put extra slices of cheese on top.
Bake for another 5 minutes until cheese melts.
Allow to cool for a few minutes, then serve

1 lb. macaroni, boiled al dente, according to pkg. directions
2 cups white sauce** (recipe below)
2 cups yellow cheddar
2 cups Muenster cheese
Add cheese to white sauce and stir. (Save a bit of cheese for the topping.) Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.
**White Sauce:
1 cup heavy cream
1 cup milk
8 Tbsp butter
3 Tbsp flour
Heat the milk and cream together almost to a boil. Melt butter in saucepan, then add all the flour stirring constantly. Let cook for 4-5 minutes, continuing to stir. Remove from heat and add warm milk and cream while whisking -- if sauce is too thick, add a touch more milk.

No-Boil Macaroni and Cheese
2 cups uncooked elbow macaroni
1 stick butter or margarine (cut into pieces)
12 ounces yellow cheddar cheese (shredded)
4 ounces mozzarella cheese (shredded)
5 cups milk
1 tsp. salt, or to taste
? tsp. black pepper, or to taste
Preheat oven to 350o. Layer raw macaroni, butter, and cheeses in the order given in a 9 x 13” sprayed baking dish. Pour milk over the top layer. Bake for uncovered 45 minutes; cover with foil and bake 15 minutes more.
MY fav way is to saute' onions and fresh diced tomatoes in butter in one covered pan, boil mac in another, drain the mac and mix it in a bowl with the onions & tomato, cheese sauce mix, and a little milk. Excellent variation.
Instructions are usually on the box, but boil the noodles in a saucepan until firm (maybe 10 mins.). Test one to see if it seems done to you, and if so, then drain them. I usually put butter into the noodles after they are drained but still hot enough to melt it and make them slippery.
If you have a powdered cheese packet, you will need a little milk to mix with the cheese powder. If you don't have milk, you can use water, but it's not quite as good. You can also mix a little butter into the cheese mixture (not too much).
Combine the cheese powder and add milk a little at a time until you think it is the right consistency. You can do this in a separate bowl while the noodles are cooking, but I usually wait until the noodles are done and drained and then use the same saucepan I boiled the noodles in, just because there's less to clean up afterwards.
Pour the cheese mixture over the noodles and stir together until the noodles are evenly coated. You're done!
Buy macaroni noodles from the store.
Buy milk, butter, salt, yellow not hard cheese slices from the store. Take them home. Open them up. Find a long large stirring spoon. Put spoon to the side. Find oven mits or small dry towel, set to the side. Find a pan that will hold 6 coffee mugs full of water. Put water into the pan almost to the top. Put pan on the stove. Put stove on high power or high flame. Wait for water in pan to bubble violently. Find a mug. Pour macaroni noodles into the mug so it is almost full. Once water is bubbling, pour macaroni noodles from your mug into the pan. Stir with spoon so noodles don't stick to the bottom of the pan. Leave pan alone for four minutes. Stir again. Look at noodles to see that they are now soft. Leave noodles in boiling water for two more minutes. Then, take one noodle out, let it cool slightly, eat the noodle to see if it's completely soft. If so, turn off fire or power to stove. Empty the boiling water slowly and carefully from the pan so you do not drop the noodles in the sink. There should be a little water left over under your noodles. Put the pan of noodles on the stove. Turn the stove on medium fire or medium heat until the water starts bubbling again. Remove all the wrappers from the cheese. Remove all wrappers from butter. Put tablespoons (about the size of your Thumb) of butter into your noodles. Stir with your spoon. Add all the slices of cheese one by one. Stir noodles and cheese together. Cheese should melt and cover noodles. Once all has been melted, pour about 1/4 cup of milk into noodles. Stir with spoon. Turn off fire or heat on stove. Put spoon into noodles and try some of them. You have made Mac and Cheese. If it does not have enough flavour, you can add some salt. Pour a little salt into your hand, then add it to the noodles. Stir the noodles and taste them again. If you want you can add more salt.

I brown the macaroni, then add hot water and 1 can of tomato sauce and salt to taste. Once the water is almost evaporated I add cheese. You can add almost any kind of cheese you like. I love to sprinkle lemon pepper in my bowl.
If you want a quick way to make it better from a box, mix powdered coffee creamery and water, instead of the milk. I made it for my mom (who is a excellent cook) and she loved it.
