How can I make cookies without a solid fat?!
Answers: I want to make cookies for my little sister but she can't have butter, margarine, or shortening. Will oil work? If so, do you have any good sugar cookie recipes without a solid fat? Thanks!
OIL COOKIES
2 eggs
1/4 c. oil
1/2 c. sugar
1 tsp. vanilla
2 1/2 c. flour
1 1/2 tsp. baking powder
Salt (pinch)
Mix together eggs, oil, sugar and vanilla. Combine dry ingredients. A little at a time add dry ingredients to egg and oil mixture. When dough is mixed take a ball at a time and roll like a shake (about 4 inches) and fold in half and twist. Bake at 350 to 375 degrees for 5 to 7 minutes. When cool add icing.
ICING:
2 c. or more powdered sugar
1 tbsp. butter
1 tsp. vanilla
Milk, little at a time
Icing consistency should be thick enough to spread and dry. You may add food coloring to icing to make more festive.

Try coconut butter or coconut oil.
It is a medium chain saturated fat and is good for most people.
Oil is just a solid fat in liquid form... margerine is hard oil.
You need something to bind the ingredients... maybe you could try a silken dessert tofu.

Sugar Drop Cookies
2 eggs 3/4 c. sugar
2/3 c. oil 2 c. flour
2 tsp. vanilla 2 tsp. baking powder
1 tsp. lemon rind 1/2 tsp. salt
Heat oven to 400. Beat eggs til well blended. Stir in oil, vanilla, and lemon rind. Blend in sugar til mixture thickens. Sift dry ingredients and stir into wet mixture. Drop with teaspoon onto ungreased baking sheet. Flatten with a greased glass dipped in sugar. Bake 8--10 min. Remove from baking sheet immediately and cool. 3 dozen.
