I have fresh saltwater fish a friend gave to me from his deep sea fishing trip?!
Answers: Any suggestions on how to cook it?
From an old pro fisherman...1 egg white (yolk makes it cakey instead of crisp) 2 T yellow mustard like French's. Mix well and roll fish in it, then in cornmeal. It is to die for. The mustard is a little salty, as is the fish, then it tenderizes and flavors so very well. You would never know it was mustard tho! This frys up so very crisp, it gave me the idea to fry my okra with egg white rolled in corn meal, too! It was a success! Everyone raves about it, as well!
yeah, wrap it in tin foil with some lemon and butter, onions...salt, pepper, and either put it in the oven or cook it on the grill like that.....
Filet it and put in on the grill with a little salt, pepper and lemon juice squeezed over it when it is done and put on a plate. you can soak it in milk and poach it whole in the oven. or batter it and fry it with whatever you like with your seasonings in the batter. But personally i like grilling the fish. Also you can broil the fish in the oven but be careful not to over cook it. You can also steam the fish, too. Side dishes can be anything light from a spring salad, macroni salad, pasta salad or just make it simple for your taste. Find out more recipes for fish from food network.com
Mix mayo, salt, pepper, and garlic well. smother mixture all over fish. Squeeze lemon over it, wrap in foil and bake at 350 degrees until foil puffs. Moist and delicious. Serve with your fav sides. Mine would be with a nice combo of steamed squash, zuchinni, avocado hearts, onions and red bell peppers.
This is my favorite way to cook fish, both fresh and saltwater:
Baked Fish And Potatoes
Ingredients:
2 pounds fish fillets
1/4 cup block butter or margarine
1 onion, thinly sliced
2 medium potatoes, peeled & very thinly sliced
1/2 cup water or chicken broth
1/2 lemon, juiced
Salt & Pepper & Garlic powder, to taste
Chopped parsley
Directions:
Preheat oven to 400*.
In a 13"x9" baking pan, season both sides of fish with salt and pepper and garlic powder, to taste, and juice of 1/2 lemon. Thinly slice 1/2 of your butter or margarine and dot the fish with it.
Arrange 1/2 of the onion slices on fish and top with 1/2 of the potato slices; repeat onion and potato layers. Pour water or chicken broth over fish, potatoes and onions. Top with salt and pepper and garlic powder, to taste, and chopped parsley. Dot with thin slices of remaining butter or margarine.
Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes, or until fish flakes easily and potatoes are done. Enjoy!
