CREAMED SPINACH

1/4 c. butter
1/4 c. flour
1 c. milk
2 boxes (16-24 oz.) frozen leaf spinach
salt and pepper to taste
dash nutmeg

Place the frozen spinach in a microwaveable dish, and microwave until thawed. (It doesn't need to be cooked completely). Place in a colandar when cooled slightly and squeeze out excess liquid.

In a large pot, melt the butter over low, direct heat. Blend in flour until smooth. Cook until mixture is smooth and bubbly. Gradually add milk and cook, stirring, until thickened. Add spinach. Cover and cook, stirring occasionally, for about 15 minutes. Season with salt, pepper, and nutmeg. Serve immediately.
