1 stick plus 1 tablespoon unsalted butter
4 ounces semisweet chocolate, with 60 percent cocoa solids
2 eggs
3/4 cup superfine sugar
3 tablespoons all-purpose flour
Special equipment: 4 (2/3 to 1-cup capacity) ramekins
Place a baking sheet in the oven and preheat to 400 degrees F.
Butter the ramekins with 1 tablespoon butter.
Either in a microwave or in a bowl suspended over a pan over simmering water, melt the dark chocolate and 1 stick butter, then set aside to cool a little.
In another bowl, mix the eggs with the sugar and flour with a hand whisk and beat in the cooled butter and chocolate mixture. Divide the mixture between the 4 buttered ramekins. Bake for about 20 minutes, by which time the tops will be cooked and cracked and the chocolate gooey underneath.
Place each ramekin on a small plate with a teaspoon and serve. Make sure to warn people that these desserts will be HOT!
Best-Ever Brownies

Ingredients:
1 1/4 cups sifted all-purpose flour
1 teaspoon salt
2 sticks (1 cup/8 ounces/226g) unsalted butter
4 ounces unsweetened chocolate, coarsely chopped
2 ounces bittersweet chocolate, coarsely chopped
2 cups granulated sugar
1 teaspoon pure vanilla extract
4 large eggs
Instructions:
Center a rack in the oven and preheat the oven to 350 degrees F (180 C).
Sift the flour and salt together and set aside.
Melt the butter and chocolate together in a medium saucepan over low heat, stirring frequently and keeping a watchful eye on the pot to make certain the chocolate doesn't scorch. (Alternatively, you can melt the ingredients in the dop of a double boiler over, not touching, simmering water.) Add 1 cup of the sugar to the mixture and stir for half a minute, then remove the pan from the heat and stir in the vanilla. Pour the mixture in a large bowl.
Put the remaining 1 cup sugar and eggs into the bowl of a mixer (or a mixing bowl if you're using a hand-held mixer) and whisk by hand just to combine. Little by little, pour half of the sugar and eggs into the chocolate mixture, stirring gently but constantly with a rubber spatula so the eggs don't set from the heat. Fit the whisk attachment to the mixer and whip the remaining sugar and eggs until they are thick, pale, and doubled in volume, about 3 minutes. Using the rubber spatula, delicately fold the whipped eggs into the chocolate mixture. When the eggs are almost completely incorporated, gently fold in dry ingredients.
Cooking Instructions
Pour and scrape the batter into an unbuttered 9-inch square pan. Bake the brownies for 25 to 28 minutes, during which time they will rise a little and the top will turn dark and dry. Cut into the center at about the 23-minute mark to see how the brownies are progressing They'll be perfect if they're just barely set and still pretty gooey. They're still awfully good on the other side of set, so don't worry if you miss the moment on your first try. Cool the brownies in the pan on a rack. Cut into 1 1/2 by 3-inch bars to serve.
The brownies will keep, covered, for 2 to 3 days at room temperature and can be frozen for up to a month. Thaw, still wrapped, at room temperature. These never freeze solid, so you might want to think about using them as a mix-in for ice cream.
Makes 18 brownies.

Brownies- just made these... yummy!
1/2 cup white sugar
2 tablespoons butter
2 tablespoons water
1 1/2 cups semisweet chocolate chips
2 eggs
1/2 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8 inch square pan.
In a medium saucepan, combine the sugar, butter and water. Cook over medium heat until boiling. Remove from heat and stir in chocolate chips until melted and smooth. Mix in the eggs and vanilla. Combine the flour, baking soda and salt; stir into the chocolate mixture. Spread evenly into the prepared pan.
Bake for 25 to 30. Cool in pan and cut into squares.
Well you could have started with a few ingredients....but if you have Cool Whip, Instant Vanilla Pudding, fruit and cookies...you can try this:
Mix one cup milk with instant pudding, add 12oz cool whip, about 3 cups of canned drained fruit..your choice, peaches, fruit cocktail, pineapple, a mixture....smash up some cookies into pieces - about a dozen, or so, mix 1/2 the pieces in and crumble the rest on top.....It's an easy quick fruit dessert....and everyone in our house likes it. Believe it or not, you can even use soured milk and it tastes just as good....
LEMON FLUFF
1 small package Lemon instant pudding mix
1 (9 oz) container Cool Whip
1 small can crushed pineapple
1/2 c. chopped nuts
1-3 c. miniature marshmellows
Fold everything together and chill......
Depends on what you have around YOUR house, actually, but here are some thoughts:
1. Hot cocoa pudding: requires unsweetened cocoa powder, milk, vanilla, cornstarch, and sugar.
2. Bananas Foster: saute sliced bananas in a mixture of butter, brown sugar, chopped pecans, vanilla, and banana liquor (if you have it, most of us don't. In that event, add a little rum to the mix.) Serve over ice cream.
3. Fresh fruit parfait sundaes: Layer cinnamon granola with vanila ice cream or yogurt and fresh fruit.
4. Hawaiian Wedding Cake: make up a yellow cake mix and bake it in a 13 x 9 inch pan. Top with a can of crushed pineapple, sliced bananas, vanilla pudding and coolwhip. Garnish with toasted coconut.
5. Brownies with ice cream and kahlua drizzle.
6. Cupcakes with cream cheese frosting and candy garnishes.

Berries, peaches, or apples- toss w/ sugar and a bit of flour, put in shallow baking dish. Top w/ a crust of biscuit topping of make a crisp w/ flour, sugar, oats, butter and cinnamon.
Bake at 350, until the fruit is bubbly, about 20-30 min.

really tasty and fairly easy&quick:
BANANA FRITTERS
6 Small bananas
185 g (1 1/2 cups) Flour
1 tablespoon Sugar, plus additional for dusting
1 teaspoon Baking powder
1/2 teaspoon Salt
2 Eggs, lightly beaten
125 ml Fresh milk
1 teaspoon Melted butter
250 ml Oil
* Slice bananas lengthwise into half, or into thinner strips to form a fan. Sift together 1 cup of flour, sugar, baking powder and salt in a bowl.
* Blend in the eggs, milk and butter, then mix to form a smooth batter.
* Dip each banana slice into the batter and turn over several times to coat well.
* Heat the oil in a frying pan.
* Spread remaining 1/2 cup flour in a shallow dish. Dust the banana slices lightly with flour.
* Fry in hot oil until firm and fully cooked.
* Repeat with remaining batter. Drain on paper towels.
* Dust cooked fritters lightly with sugar before serving.
If you have any small cups of pudding put in a small bowl, top with cool whip and add your favorite fruits. Just makes one serving.
