How about corned beef hash? It's really good and I'll bet you can find all kinds of recipes for it on the internet!

make a batter as if you were making pancakes but make it thicker add a little baking powder to give it extra rise and then chop the corned beef into small pea size cubes add a small onion chopped some peas and corn if you like and a little chicken stock powder for taste mix well and then place about 2 tabspoons of the mixture into a heated frypan with a little oil cook as if you are cooking pancakes...there you go corned beef fritters, my hubby loves them

Make this hash with leftover roast beef or corned beef

3 cups cooked beef, coarsely chopped (use leftover pot roast, oven roast, corned beef, etc.)
2 large baking potatoes, peeled and diced
2 medium onions, chopped
1 green bell pepper, chopped
2 ribs celery, finely chopped
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon ground thyme
1 1/2 cups beef broth*

Corn beef and cabbage soup

2 tablespoons butter
1 1/2 cups chopped onion
1 cup sliced celery
2 cloves garlic, minced
2 quarts chicken broth
1 1/2 cups chopped or julienne-cut carrots
1/2 small head cabbage, coarsely chopped, about 4 to 5 cups
1/4 cup pearled barley
1 small bay leaf
1 tablespoon fresh chopped parsley, or 1 teaspoon dried parsley flakes
1/2 teaspoon dried leaf thyme
1/4 teaspoon freshly ground black pepper
2 to 2 1/2 cups diced cooked corned beef, about 10 to 12 ounces
1 can (14.5 ounces) tomatoes, diced, undrained
salt, to taste

Corn beef hash. Bake some potatos and then peel them, and chop them up into small chunks. Chop up the corned beef and mix it together. Fry up in a skillet and serve with eggs, hashbrowns and toast.

Chop up left over boiled potatoes and combine with small pieces of corned beef for excellent corned beef hash.

My mother used to make a corned beef casserole that was really easy. Boil and drain your favorite noodles, add cut up corned beef, peas and a can of cream soup (mushroom, celery etc), chopped black olives (optional). Top with buttered cracker crumbs and bake at 350 for 15 to 20 minutes.

Reuben sandwiches are my favorite with left over corned beef.

You'll run out of corned beef before you run out of ideas.
