People say don't wash mushrooms as they soak up a lot of water. I watched an episode of Good Eats on Food Network with Alton Brown. Alton Brown did an experiment on mushrooms and found that they don't absorb nearly as much water as once thought. So, I always give my mushrooms a quick wash and have never ruined a recipe! Go ahead and give them a quick wash. If not, wipe down with a wet paper towel. Good luck!
Oh, balsamic vinegar is awesome on portobello mushrooms!
I think that you are supposed to peel mushrooms or just wipe them off, not wash them.
Gently wash with a damp paper towel. Do not submerge mushrooms in water. They may be clean from the grocery store but possibly not.
Try balsamic vinegar or sautee in wine and top with mozzerella.
When working in a resturant we would dust off the dirt and slice for the food bar. As for cooking I have sauted with onion, garlic and red wine.
No you do not wash mushrooms. You damp your hands and just skin off any residue on it.

i usually just give them a quick wipe with a wet paper towel, i actually like mine sauteed with plain ol' salt and pepper.
I'd was them.lite green pepper or light sprinkle of red peppers if you like a little spice.
In my experience cooking, I have never found that "washing" my portobellos ruined them or caused them to become too water-absorbed.
I think that in this day and age of chemtrails, pesticides, and god-knows-what-else that it would be amiss to NOT wash our edibles.
I like to use organic fruit/veggie wash/spray. It's mostly water and surfactant. You can do a light spray, then rinse (not soak, if you're concerned with water absorption), then wipe them down. A bottle of wash/spray can be purchased in most places you buy your produce.
You might even find that it's a good buy because you can soak all your produce (or most of it, at least) in a large bowl...then you never have to worry about waxes and sprayed junk on your foods when you need to prepare or eat them. One bottle lasts me a long time and I cook a LOT!
In regards to cooking them...I am a huge fan of ghee...if you're unfamiliar with this, it's clarified butter. You can find instructions on how to make this all over the internet. A light spray of extra virgin olive oil is also very good. For seasoning, fresh garlic is my fave, sliced up or minced. You might also like white pepper. Also, balsamic has been mentioned a few times on here and I agree that that's very very good.
Something more "dressed up" which you might also like is a light white cheese & fresh garlic butter sauce poured over the top of braised center cut beef medallions & asparagus spears. This is one of my faves to be served over farfalle pasta.

never wash mushrooms. use a wet paper towel or a soft brush to clean them. I cant think of anything better than grilled mushrooms in olive oil and garlic!!
