Cooling angel cakes..?!


Question: do u have to put any water inside an empty bottle when u use it to invert the angel cake pan?

is it possible that the bottle will break when the hot angel cake pan which is fresh from the oven is inserted into it? ( i have a beer bottle)

is there any alternative in cooling it? in baking 911, it says that a colander can also be used but mine is not big enough for the pan to fit inside it...

why did my sponge cakes' top burned (it was already done prior to the estimated baking time) and didn't reach enough volume? my oven temperature was 350 F as indicated by the recipe.

Your method is fine. Putting water into the bottle is not necessary unless you feel that the bottle is too light. The bottle will not break not to worry.
Your sponge cakes' top burned because firstly you might have placed the cake tin too high up in the oven or the oven temperature is too hot or your oven condition is too hot at 350F.
You need to understand your oven and use it regularly to know their correct temperature levels. If your cake does not reach its proper volume it might be the case of the mixture being too stiff due to poor measuring skills or you might have pressed out the air when folding in the flour. Care must be taken to fold in the flour in angel cakes.

I use a 6" metal funnel to invert the angel cake pan on to cool it.. It keeps it elevated enough that the air will circulate well, & I don't have glass bottles anymore..
