What do I do with canned white kidney beans?!


Question: I made this for my husband one day for lunch and we all loved it. Cannellini beans are italian white kidney beans
Quick and Spicy Tomato Soup

3 tablespoons olive oil
2 carrots, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 (26-ounce) jar marinara sauce ( I used a red wine marinara)
2 (14-ounce) cans chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper


Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

I have used them for a veggie chili with TVP and there is a greek bean spread with a mashed potato, garlic and olive oils called skordilia.

Even in a bean salad, like red ones they need to be rinse, I make a Jamaican soup with pumpkin, spinach, onions, hot peppers, ginger and white kidney beans, it is known there as "Jump Up", the first spoonful you jump up.

Here's a change from mashed potatoes.

Saute a small, diced onion in butter or bacon fat until clear and tender.
Add a clove of garlic, minced.
Add 2 cans of white beans, drained and rinsed.

Heat through, mash as you would potatoes and serve with gravy or sour cream.

This recipe is called Mock Mashed Potatoes, but I don't think it's like potatoes at all, so I left off the title at the top. It's more like white re-fried beans. We like it with pork chops, gravy and a small dollop of sour cream.
