Why when i bake from scratch the cupcakes fall and are sticky in the middle?!


Question: Why when i bake from scratch the cupcakes fall and are sticky in the middle!?
when i bake from scratch my cupcakes fall in the middle and are still sticky!.!.!.even with a cake tester!.!.!. i mean it tastes good but they still fall!. Usually this happens with chocolate cakes not a yellow cake !.!.!?!?!?Www@FoodAQ@Com

Its really important not to open the oven too soon!. the disturbance could "break" the structure of the product and cause it to collapse!. If it is still wet in the center you just took it out too soon!. Ever see tunnels in the product while eating - long holes through the product-!? that is caused from over mixing!.!. doesnt really affect the taste, just the structure and apperance!. Just try experimenting!.!. baking is really a science, it takes very careful and methodical steps to produce a good product!. Hang in there, all bakers have had these issues!Www@FoodAQ@Com

well, you have to play with the temp of your oven!. Maybe cook it a little higher than the book says!. Every cookbook has a "know your oven" section!. Esp if you have a gas oven you have to really figure out the temping of the recipes!. If you have an electric, raise it, but not by too much!.Www@FoodAQ@Com

I think either you use beater while mixing flour it causes these problems or may be your oven is not working properly!.Www@FoodAQ@Com

first dont over mix then u have to put the right amount of flour and try not to open the oven until after 20 mints so it dosnt fall and try to make sure the heat is enough and accuretWww@FoodAQ@Com

if u slam doors while baking cake falls!. also, if you hav the oven set to hight the outside will cook quickly and the inside will not bake thoroughly!. VOTE ME PLZ!!!!!!!Www@FoodAQ@Com
