Quick, easy and delicious cheesecake!

Get 10 digestive biscuits and crush them to a powder (place them in a bag or cloth and hit repeatedly with a rolling pin!. Add 1 oz of butter and press it together with the crumbs to make a dough for the cheesecake base!. Press the dough into the bottom of a greased 9 inch Pie Dish!.

Mix together a small tin of condensed milk with a small (125g) packet of cream cheese (e!.g!. Kraft Philadelphia)!. whisk for one minute and Squeeze in the juice of one lemon whisk for another 20 seconds and then pour in to the pie dish!. Chocolate Chip Cheesecakes
1/3 cup crushed chocolate wafers
2 Tbsp!. melted butter
1/4 cup ricotta cheese
2 oz!. cream cheese
zest of 1 lemon
1/4 cup sugar
1 egg
2 Tbsp!. mini chocolate chips
Preheat oven to 350 degrees F!. Spray a mini muffin tin with nonstick cooking spray!. Stir together crushed chocolate wafers and melted butter!. Fill each mini muffin cup with 1 teaspoon of chocolate wafer mixture!. Press down until firmly packed!.

Blend ricotta cheese, cream cheese, lemon zest, sugar and egg together in a food processor!. Divide evenly among mini muffin cups!. Sprinkle a few mini chocolate chips over each mini cheesecake!. Bake 20 minutes or until just set!. Let cool completely!. Refrigerate at least 1 hour!.

Cherry Cheesecake

Ingredients

3oz!. butter
4 tbspns!. golden syrup
6oz!. digestive biscuits (finely crushed)
1oz!. soft brown sugar
8oz!. cream cheese
2oz!. sugar
? pint double cream
1 tin cherry pie filling



Method

1!. Melt butter, sugar, syrup & add crumbled biscuits
2!. Press into bottom of greased & lined 8” tin, chill in fridge or freezer
3!. Beat cheese & sugar together, lightly whip cream & fold in
4!. Spread over base and chill well
5!. Pour pie filling on top
6!. Serve chilled (but while still firm)

This is so so so easy!.!.!. and just fab!. Small note - when zesting the lemon and orange, go easy - I went a bit overboard the first time and got a fair bit of the bitter white stuff as well as the coloured rind, and my cheesecake was a bit sour!. Just get the coloured rind and you'll be fine!. I'm thinking of making a strawberry cheesecake next time - just using a couple of packs of strawberry jelly and garnishing with fresh strawberries!.

Savage Cheesecake
Serves 8
Prep 30 min
Ready in 3 hours

Ingredients
1 pack Hobnobs
110gm butter
2 packs Philadelphia cream cheese
2 oranges
2 lemons
? pint/300ml cream
1 pack lemon jelly
1 pack orange jelly

Directions
Put biscuits into plastic bag, remove air & smash with rolling pin (or the bottom of a wine bottle will do grand!) until all crumbs!.
Melt butter and mix in crumbs!. You might need more butter but don’t have it too wet or it'll just taste sickening!.
Press mixture into bottom of dish (preferably one that has a pop out base but any kind of dish is fine really!. I use a 12-inch springform cake tin)!. Put in fridge to set!.
Melt jelly in microwave and add half a mug of cold water!.!.!.leave to cool!.!.!.but not to set!.!.!.keep mixing it around and making sure it’s not setting!
Beat cream cheese with the juice and rind of the oranges & lemons!.
Beat the cream separately & then fold into the cheese mixture!.
When jelly is pretty cool (lukewarm is ok) add to the cream/cheese mixture and mix thoroughly!.
Take base out of fridge and pour cheesecake mixture on top!.
Place back in the fridge to set for at least 2 hours!.

Useful point for cutting cheesecake - have a jug of hot water and a towel standing by - dip the knife between each slice and wipe clean!. Keeping it hot will stop it dragging on the filling and making a mess!.Www@FoodAQ@Com

Philly 3 Step Cheesecake

2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
9-inch graham cracker crust

Mix cream cheese, sugar, and vanilla until creamy!.
Blend in eggs!.
Pour into crust!.
Bake at 350 for 40 minutes!.
