Far as I know you can't undo the damage done by canning food!.!.!.this process strips the nutrients, so about the only way to get the nutrients is to take a good multivitamin, which is a good idea for most of us who can't always eat right!. The healthiest cans are no- or low-salt varieties, and there is always organic which gets you away from pesticides!.

As a rule, I stick with only the most basic ingredients, those that are just a real pain to cook, and single ingredients!. My staples of canned food are tomato products, broth, and beans like pintos, black, butter beans, etc etc!. I also love the occasional can of ravioli (but I have learned that frozen is better, add my own sauce) and I eat Progresso soups with 0 Weight Watchers points!.

You can also try frozen ingredients!. This is how I get most of my veggies!. The freezing process, if you eat the food in a relatively short time (like within a couple weeks) helps the food retain more of its nutrients, and saves the color and crunch too!. Canned food is just so mushy!.

As always though, when you can buy fresh food, prepare it from scratch, eat with the seasons of the food, eat locally grown food, eating from scratch, you save money and also enjoy the best ingredients you can get!. There are methods that give you quick cooking times even with fresh foods, making all that processed food unnecessary!.Www@FoodAQ@Com

you can't undo the damage done by canned food!. but you can fix that for yourself!. buy the freshest one!. thats as far as i know!. i always buy the freshest one so i am strong and healthy!.Www@FoodAQ@Com

You can reduce the amount of sodium in canned vegetables by draining and rinsing them with fresh water!. It works well, but does not remove all of the sodium!. I found this tip at the American Heart Association website!. Of course fresh is best, but if you must used canned this is the way to go!.Www@FoodAQ@Com
