Roasting temperatures all work, but the outcome will vary based on the temperature and how you treat it in the oven!.
It's easy to understand that the lower the temperature, the slower it cooks!. What's also important to know is that the slower something cooks (fish is the BIG exception here!) the more likely you'll get a moist and easy to eat dish!. what you may miss with a slow cook/low temperature is that browned, crispy outside that give some roasted meats a disctinct flavor (particularly when you've rubbed the meat with seasoning!.) Some people solve this by slow roasting their dish for all but the last 5-10 minutes (eg at 350) and then increasing the temp to 450 for that last 5-10 minutes, uncovered!. Keep a close eye on the roast at this point!.
VERY important is to COVER any roast for the majority of the cooking time!. This helps seal in the moisture and flavor!. That last 5-10 minutes won't dry it out too much!.
good luck an bon appetite!.
