I just bought a huge bag of carrots. What healthy thing should I make with them?!

Carrot Soup
2 tablespoons vegetable oil
1 onion, chopped
1 tablespoon curry powder
2 pounds carrots, chopped
4 cups vegetable broth
2 cups water, or as needed
Heat oil in a large pot over medium heat!. Saute onion until tender and translucent!. Stir in the curry powder!. Add the chopped carrots, and stir until the carrots are coated!. Pour in the vegetable broth, and simmer until the carrots are soft, about 20 minutes!.
Transfer the carrots and broth to a blender, and puree until smooth!. Pour back into the pot, and thin with water to your preferred consistency!.Www@FoodAQ@Com

You can make a carrot soup! It is soooo good! There are tons of recipes out there for carrot soup, so I will let you pick what you want!. You could also make split pea soup with sliced carrots!. Carrot cake (shred the carrot), bran muffins with carrot!.!.!.there are alot of ideas!. My fave is the soup though!Www@FoodAQ@Com

Slice them thin and marinate them in an oil-vignarette dressing !.!.!. grate them and use in soups, chilis, or even spaghetti sauce (it sweetens and thickens) !.!.!. big hunks with pot roast or brisket !.!.!. shred some and mix with a little mayonnaise, salt, pepper and raisins for a carrot-raisin salad !.!.!.

Peel, slice & boil!. Freeze on a cookie sheet, then transfer to ziplock bags!. When you need some, just grab a handful or two!. Scalloped carrots are excellent!. You can find many recipes for crrots on the major recipe sites!.!.!.Www@FoodAQ@Com

1 cup rolled oats or oatmeal
1 cup firmly packed brown sugar
1/2 cup butter, softened
1 teaspoon vanilla, coconut or rum flavoring
1 egg
1 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1 cup finely shredded carrots
1/2 cup raisins or Craisins
1/2 cup chopped walnuts or pecans
2 cups confectioners' sugar
2-3 tablespoons orange juice
Preheat oven to 375°F!.
Using a food processor, process oats or oatmeal until it reaches the consistency of flour!. Set aside oatmeal!. Using the shredding disc of the food processor, process the carrots!.
In the bowl of an electric mixer, combine brown sugar, vanilla, egg and butter; beating well until fluffy!. Add oats, flour, baking powder, salt, cinnamon and cloves!.Stir in the grated carrots and raisins (or Craisins and nuts, if using) last!.
Drop by large spoonfuls onto greased, sprayed, or silicone-lined cookie sheets!.
Bake for eight to 10 minutes at 375°F or until golden brown!. Cool on wire racks before frosting!.
To make frosting, beat together confectioners' sugar and orange juice until spreading consistency!. Frost cooled cookies!.
Makes 3 dozen cookies!.

Stir or sift together flour, sugar, baking powder, baking soda, cinnamon and salt!. In mixer bowl, beat egg until light, then add oil and starter!. Slowly stir in dry ingredients!. Stir in carrots, raisins and nuts!. Pour batter into prepared pan!.
Bake about 40 minutes or until toothpick inserted in center comes out clean!. Cool in pan on rack, then frost top!. Cut in squares!.
