If an apple is old, can I use it in pie/muffin or any sort of baking?!

Question: If an apple is old, can I use it in pie/muffin or any sort of baking!?
I ate an apple and it did not taste good! I know with bananas, if they are extra ripe, you can use it in muffins/bread, so I was wondering if the same applies to apples or should I toss 'em!?Www@FoodAQ@Com
