Meatloaf recipes???!
would love to make a meatloaf but so many different ideas, would be interesting to see what i can find here!.

I make a 'meatloaf' with a whole mix of beans and pulses or lentils - any sort, but soak and cook them first!. Add a chopped onion, 1/4 pound grated cheese, concentrated tomato, cajun spice (or curry spices/ worcester sauce or any of your preference) then crack an egg and mix all together with a handful of rolled oats!. I then pop it into a loaf tin which I have well lined with bacon slices (leave these out if feeding vegetarians)!. Cook for 40 to 50 mins in medium hot oven until firm to touch, and cut when cold!. Best flavour after 24 hours, but can be eaten straight away hot!.
There are so many variations to this, it never tastes the same twice over!

mince beef, onion, garlic, a few slices of torn up bread and an egg in a bowl and mush together with your hands, (feels fab!!)
Put in a tin and put bbq sauce on top!.
Put in oven medium heat about 40 minutes thenre apply some more bbq sauce!.
heat thru and its done!! fabulous!.!

i make it with onion, green pepper, can of tomatoes,1 egg, 1/2 cup italian bread crumbs,,, 1/2 teaspoon garlic ,,salt and pepper

I make mine the old fashioned way, the Paula Dean way and it is great every time!.
Old Fashioned Meat Loaf
1 lb ground beef
1 1/4 tsp salt
1/4 tsp ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 oz canned diced tomatoes with juice
1/2 cup quick-cooking oats
topping:
1/3 cup ketchup
2 Tbsp brown sugar
1 Tbsp prepared mustard
Preparation
Preheat oven to 375° F!.
Mix all meatloaf ingredients well and place in a baking dish!. Shape into a loaf!.
Topping:

1/4 teaspoon oregano
1/4 teaspoon basil
1/2 red or green pepper, cored, seeded, chopped
1/2 tablespoon Worcestershire sauce - Lea & Perrins
1/3 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon English mustard
Set the oven to 180C / 350F / Gas Mark 4!. This will give it time to heat up before the Meat Loaf is ready to be cooked!. If you are making your own breadcrumbs and have no dried bread, break up a slice or two of bread (brown or white), put the pieces in the heating oven to let it dry out ready to be crumbled!.
Mix everything except the meat,Mix the egg, breadcrumbs, onion, herbs, salt, pepper, mustard and Worcestershire sauce (everything except the meat) in a large bowl or pan (probably bigger than you think!)!.
Use a spoon or fork to mix the ingredients, don't overdo it, just enough to mix the ingredients evenly!.
Add the minced beef to the mixture one third at a time!. Combine the minced beef with the mixture using a fork or your hands!. This way the mixture will be more evenly mixed!.
Place the mixture in a rectangular tin (firm it down with light to medium pressure) and place it in the oven (pre-heated to 180C / 350F / Gas Mark 4) for one hour!. It is possible to do without the tin - just shape the mixture into a rectangle with medium pressure!. It will retain its shape during cooking, but be sure to put it on a cooking container of some sort because it will drip out the fat from the meat as it cooks!.
During the cooking the meat will release fat and juices - pour these away after half an hour cooking if you want to minimise the fat content of this meat loaf recipe!.
Before serving (carve into thick slices) leave the Meat Loaf to cool for about 10 to 15 minutes!. It will carve much better if not piping hot!.

give the ingredients I like, you add amounts according to your personal taste, how's that sound!?
Ground beef of course!. I usually use at least 3 to 5 lbs!. I like left overs!
I always put onion soup mix, mushrooms,(fresh or canned),snack crackers (instead of oatmeal), eggs!. For moisture, I do put in an egg or 2, but I also like to put a little ketchup and mushroom soup
right in the mixture!.
For the coating, I use either ketchup with just a smidgen of brown sugar, or a mixture of ketchup and mushroom soup!.Www@FoodAQ@Com

I use the usual ingredients in a typical meatloaf, except that I use a half and half mixture of ground beef and pork!. It's a better flavour for me as I'm not too keen on beef mince!. I don't put in an egg, because I have a life threatening allergy to them, so I moisten the loaf with a small amount of milk and add lots of grated emmental or gruyere cheese instead!. Some ketchup or tomato sauce is good as well!. I find it best to cook the onions a little before adding them to the meat mixture as they are cooked more thoroughly than if they are added raw to the mixture!. 700g minced beef or 500g minced beef and 200g minced pork
2 onions, finely chopped
2 garlic cloves, crushed
1 large carrot, grated
2 tsp dried thyme
1 egg, lightly beaten
250g fresh breadcrumbs
50ml milk
2 tbsp Worcestershire sauce
2 tsp Dijon mustard
1!. Preheat the oven to 160°C/fan140°C/ gas 3!. Grease a 1kg loaf tin!. In a bowl, mix the mince, onions, garlic, carrot, thyme and egg!. Meanwhile, in a separate bowl, mix the breadcrumbs with the milk, then add to the meat mixture!. Stir in the Worcestershire sauce, mustard and season well!.
2!. Fill the loaf tin with the mixture!. Cover with foil!. Put in a deep roasting tin and pour in boiling water to come a third of the way up the loaf tin’s sides!. Bake for 1 hour 30-40 minutes, until cooked through!. Cool for 15 minutes in the tin, then remove, slice and serve with mashed potato, gravy and mixed vegetables!.

Freeze the cooled meatloaf for up to 3 months!. Thaw, slice and microwave until hot!.Www@FoodAQ@Com
