Side Dish - Gratin Dauphinois

Creamy Gratin Dauphinois - an easy side dish recipe!. Makes a delicious Salmon side dish or just eat it on it’s own with a simple green salad!. It’s a favorite in our house, - unfortunately that means I don’t get the leftovers and I bet you won't either!.

Ingredients - serves 4 - 6


1kg/2lb floury baking potatoes such as King Edwards
1 garlic clove
100g/40z gruyere or emmental cheese, grated
250ml/8floz double cream (heavy cream) or crème fra?che
1 teasp fresh thyme leaves
Salt & pepper
Method

Pre-heat the oven to 250C/175F Peel and thinly slice the potatoes!.
Cut the garlic clove in half and rub around the inside of a ceramic, porcelain or glass gratin dish!.
Layer half the potatoes in the bottom of the dish, sprinkle with some thyme, half the cheese and half the cream, season with salt & pepper!.
Layer the second half in the same order and bake uncovered for about 50 - 60 minutes or until the top is golden and crisp on top and the potatoes cooked!.Www@FoodAQ@Com

i bake my salmon at 350 with honey and brown sugar on it and serve it with mango salsa, it is delicious and easy, I usually serve green beans ( french style) with a little bit of seasoned salt and butter, and than I make lipton's noodle dish angel hair pasta with parmessan cheese my kids and family love this mealWww@FoodAQ@Com

Citric Cous Cous as a very simple low fat starch!. I will make mine with a mock mojo!. Then as a veg option you can do an arugala and poached pear salad with shaved asiago and toasted walnuts with a light vinaigrette!. You can do a million variations of these two depending on what you are baking into your salmon!. Such as compound butter or olive oil, sea salt and toasted peppercorns with a drizzle of balsimic reduction!.Www@FoodAQ@Com

How are you preparing the salmon!?
Wild rice or a combination of long grain and wild rice!.
Nice crisp salad!.
If salmon is grilled then grill any number of veggies while you do the salmon!. also try grilling fruit!

I think I would keep it simply!. How about red potatoes (just wash them & microwave on the baked potato setting) & some steamed baby squash or baby artichokes!. You could serve a nice salad & some warm French bread!. Here's a great salad:

Marinated Avocado-Mushroom Salad

? cup salad oil
? cup dry white wine
2 tablespoons vinegar
1 tablespoon snipped parsley
? teaspoon sugar
? teaspoon salt
? teaspoon dried basil, crushed
1 medium avocado, seeded, peeled & sliced
1 cup sliced fresh mushrooms
2 thin slices onion, separate into rings
3 cherry tomatoes, quartered
Bibb lettuce

To make dressing, in a screw-top jar, combine oil, wine, vinegar, parsley, sugar, salt & basil!. Pour dressing over avocado, mushrooms, onion rings & cherry tomatoes in a shallow dish!. Cover & chill for 2 to 3 hours; occasionally spoon dressing over the vegetables!. Drain vegetable mixture!. Arrange vegetables on Bibb lettuce leaves!. Makes 4 servings!.

(NOTE: I often add some chopped cucumber to this too!. I serve on individual salad plates with one or two leaves of lettuce…I prefer Butter lettuce!. It is very pretty and tasty too!)
