MEXICAN PIZZA

Basic pizza dough
1 lb!. hot sausage, not in casing
1 lb!. grated monterey jack cheese
1 lb!. grated cheddar or colby cheese
6 oz!. can jalapeno peppers
1 pkg!. taco seasoning
1 1/2 c!. Mexican salsa (tomato and chili sauce)
3 tbsp!. olive oil

For one 13 inch deep dish pizza, brown hot sausage (drained) and taco seasoning together!. Preheat oven to 450 degrees!. Roll out the dough to form a circle slightly larger than pizza pan!. Press dough to sides of pan; cut off excess dough that hangs over rim!. Brush with olive oil!. Combine the cheese and spread two thirds of mixture over the dough!. Distribute the jalapeno peppers over the cheese and then hot sausage over the peppers!. Next spread the salsa as evenly as possible over the entire pizza, sprinkle the remaining cheese over the top and bake for 25 minutes until the crust is golden brown!.Www@FoodAQ@Com

I would stick to the toppings that work - pepperoni, mushrooms, sausage, onions and olives!.Www@FoodAQ@Com

This is one of my favs!. !. it's good cooked on the grill in the summer!.

peach, prosciutto, and goat-cheese pizzas
For dough
1 (1/4-oz) package active dry yeast
1 teaspoon sugar
1 cup warm water (110–115°F)
2 1/2 cups all-purpose flour
1 teaspoon salt
For topping
3 tablespoons extra-virgin olive oil
1 1/2 firm-ripe peaches, cut into thin wedges and halved crosswise
8 very thin prosciutto slices, torn into pieces
3 oz soft mild goat cheese, crumbled
2 teaspoons chopped fresh rosemary

Special equipment: a pizza stone and baker's peel

PreparationMake dough and let rise: Stir yeast and sugar into water until dissolved and let stand 5 minutes, or until foamy!. Whisk together flour and salt in a bowl and add yeast mixture, stirring until a dough forms!. Knead dough on a floured surface 5 minutes!. Put in an oiled large bowl and turn to coat!.
Let rise, covered with plastic wrap, in a warm place until doubled in bulk, about 1 1/2 hours!.

While dough is rising, put pizza stone in lowest position of oven (on oven floor if gas, lowest rack position if electric; remove other racks in either case) and preheat oven to highest setting (500–550°F; allow about 1 hour to preheat with stone)!.

Shape dough: Quarter dough on floured surface and dust with flour!. Shape and stretch 2 pieces of dough into 7- by 5-inch ovals (keep remaining dough covered)!.

Sprinkle baker's peel generously with flour and carefully transfer ovals to it!. Jerk peel; if dough sticks, lift it and sprinkle flour underneath!.

Top and bake pizzas: Working quickly, brush ovals with some oil and top each with one fourth of peaches, prosciutto, cheese, and rosemary!. Season with salt and pepper!.

Line up far edge of peel with far edge of stone and tilt peel, jerking it gently!. When edge of first pizza touches stone, quickly pull back peel to completely transfer pizzas to stone (do not move pizzas)!.

Bake until crisp and golden, 6 to 8 minutes!. Slide peel under pizzas to remove from oven!.

Shape, top, and bake 2 more pizzas in same manner!. Drizzle remaining oil over pizzas!.Www@FoodAQ@Com

Try spreading a thin crusty base with tomato puree, then cover with thin slices of chorizo sausage, with spinach, fresh mozzarella, cherry tomatoes, and dot with freshly made pesto!.

Or, fry some large prawns, small pieces of chicken and some sliced peppers in olive oil with garlic, chilli, ginger, a large handful of chopped parsley and a squeeze of lemon juice, then spread with pizza with the olive oil and all the 'bits', top with the prawns, chicken, peppers, and pieces of cooked, sliced chorizo sausages!. Top with a small amount of mozzarella!.
(I made this pizza to use up a load of leftovers, it was delicious!)!.Www@FoodAQ@Com

My Aunt makes my favorite Pizza!. She starts with a regular Tombstone sausage pizza!. She bakes it part way, right on the rack to get the crust partially done!. Then she takes it out, cuts some tin foil so nothing drops off, and puts the pizza on that!.
Then, she boils sausage links and cuts them into about 1/2" pieces!. Dices onions and green pepp-ers!. She spreads a thin layer of Chef BoyArdee
pizza sauce, then puts down a layer of ingredients, tops it with shredded cheese, and bakes until it's golden!.
Of course, you can add or subtract anything you like on a pizza!. It's awesome! You have to eat it with a fork though!Www@FoodAQ@Com
