You can use your Whisk attachment for the water, yeast and sugar step, on low!. Though, this step is actually easier by hand!.
For the next step, attach the Dough Hook to your mixer!. I would recommend the lowest speed for this step as well!. Since the original recipe kneads the dough by hand the lowest setting on the mixer should be enough power to develop the gluten without making the end product too tough and crusty!. I think you'll need only 3-4 minutes of kneading with the mixer, instead of the 8 mins!. by hand!.Www@FoodAQ@Com

The kneading would be done with your bread hook attachment !.!.!.!.!. btw: I've had a KitchenAid mixer for over 30 yrs, and it works as good as the day I bought it! Dontcha love it!Www@FoodAQ@Com
Follow the directions as it says!. But when it says to mix by hand, use the dough hook at speed 2 or lower!. Then when it says to kneed the dough, turn it on speed 2 until all the dough is wrapped around the hook, then an extra 30 seconds or so!.Www@FoodAQ@Com
