Question: I have a pack of chicken breast and dont know what to do with it!.!?
I am a picky eater, i dont like veggies all that much, i like things like corn and potatoes!.!.!.!.the only green one i eat is spinach and thats if its in a dip or eggroll (from chilis!.!.!.haha)!. I like italian food tho, pasta is a fave of mine and also potatoes!. I dont like rice too much unless its in a cajun dish like gumbo or something( im from Louisiana)!.My fiance isnt picky at all and loves to try anything!. I have a 3 year old daughter who is iffy about things but she is willing to try things!. If her grandpaw can get her to eat an oyster raw then she will try anything!.!.!.HAHA!!!(Yuck for me tho)!.!.!.anyways, all the help is appreciated and i cant wait to hear what ideas everybody has!. Easy Chicken Parmesan

INGREDIENTS:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2 to 3 tablespoons olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese

PREPARATION:
Whisk together the egg and milk!. Dip the chicken breasts in milk and egg mixture and then in bread crumbs!. Heat olive oil in a large skillet over medium-high heat!. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side!.

Set chicken in a baking dish!.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast!. Pour 1 jar of your favorite spaghetti sauce over all!. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly!. Serve with spaghetti, garlic bread and a nice green salad!.Www@FoodAQ@Com

Here's a gorgeous recipe to treat yourself!
The eggplant tastes delicious- even to veggie haters - i PROMISE!!

Here we go:(This recipe is for about 4 breasts,but you could adjust , depending on the quantity you need to cook or the size of the portions)

Pound breast a bit with a mallet(or a rolling pin!), to flatten!.
Cut each one in half!.
Dredge with flour!.
Keep aside!.

1 eggplant(aurbegine)Slice into thickish rounds and cook on oiled grill till golden!.

*I do it on my George Foreman grill but an ordinary skillet will also do or you could just pop them in to a hot oven after drizzling with some oil!.*

Chop an onion!.
Slice about 8 button mushrooms(white)

Heat 1 - 2 tablespoons of butter or oil

Add in 1 chopped onion,cook for 3 mins until just 'pink'!.

Add in 1 full teaspoon of black mustard seeds

Throw in the mushrooms along with 1 teaspoon of ground garlic!.
(If you feeling brave,you could put in 1 teaspoon of ground green chili or just leave it out!.)

Cook for a little while ,then throw in floured chicken breasts!.Add salt to taste and a grinding of black pepper!.
Cook till chicken is well coated with the other ingredients and LIGHTLY browned!.

Pour in 1 tub (250-300ml fresh cream) and mix till thickened a bit!.Turn off heat!.
Layer chicken with sauce , top with eggplant slices,repeat until all is used up!.Sprinkle cheese on top and put into a hot oven to melt cheese!.

Serve with a tossed salad and some home made chips!.

You may cook the Kiev's cutlet!.At first I put breasts in boil watter for 5-8 minutes!.Then sprinkle with spices (hot pepper, salt)!. Then roll its in flour, beaten eggs and bread-crumbs!. Fry breasts in oil!.Www@FoodAQ@Com

Marinate the chicken in Italian dressing (the kind for salads) and then either grill the chicken or put the chicken and the marinade in a baking dish and bake for 1 hour covered at 350F degrees!. Cook some pasta or rice for a side dish!. Put the liquid from the chicken in a dish and use that for dipping chicken into it and/or put it on your pasta or rice or mashed potatoes!. This is a simple but tasty way to cook chicken!. Have what you want for any other veggies!.Www@FoodAQ@Com

Thaw the chicken breast and place in cooking dish!. Pour a jar of Alfredo sauce all over it!. You can add whatever you want to it, like pepper, add peas or corn or mushrooms to the sauce before pouring it over the chicken!. It's so easy and you can tweak it to what you like! Bake it at 425 degrees for about 35-40 mins or until no longer pink in the middle!Www@FoodAQ@Com

You can easily butterfly the breast, then put on a layer of provolone or swiss cheese, top that with thin sliced smoked ham, and top it with sliced portobello mushrooms!. Fold over!.

Place in a foil lined baking dish!. Pour on some White or Marsalla cooking wine!. Cover with foil and bake at 350 degrees for approx!. 30 min!. (make sure the chicken is cooked through)!.

Serve with Mashed potatoes and a salad or green veggie!.

You can serve with Baked Sweet or White Potatoes and other veggies!.

If you want it spicy you can use Montery Jack, Pepper Jack or Horseradish cheese!.Www@FoodAQ@Com
