This is my whole family's absolute favorite side dish:

SPINACH, RICE & CHEESE
1/4 c!. melted butter
8 oz!. shredded cheddar cheese (or mixed cheeses)
1/2 - 3/4 c!. chopped onion
1 pkg!. frozen chopped spinach, thawed & drained
1 c!. Minute Rice, raw
1/2 - 1 tsp!. garlic salt
1/4 c!. sour cream
Mix everything together really well!. Put into a greased 2 qt (or 9x13") pan and bake at 350 for 1 hour, covered with foil!. Don't fight over the crusty edges!Www@FoodAQ@Com

i love hashbrown casserole it is a great side

2 lbs frozen hash browns
1/2 cup margarine, melted
1 (10 1/4 ounce) can cream of chicken soup
1 pint sour cream
1/2 cup onion, peeled and chopped
2 cups cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon pepper

1Preheat oven to 350F and spray an 11 x 14 baking dish with cooking spray!.
2Mix the above ingredients together, place in prepared pan and bake for 45 minutes or until brown on top!.Www@FoodAQ@Com

Sicilian Grilled Meatballs, or Polpettine alla Griglia:
One usually thinks of meatballs going into a sauce of some kind, or being fried to golden perfection!. However, Sicilians also grill them, and very fine eating it is, too!. My grandmother came from there!.
INGREDIENTS:
2 1/4 pounds (1 k) boned veal or pork, ground!.
5 ounces (125 g) pecorino Siciliano (if possible the variety with pepper corns in it, if not a mild Romano), freshly gra
1 cup bread crumbs, moistened in milk and then squeezed dry
3 eggs
2 tablespoons minced parsley
1 clove garlic, minced
Salt & pepper
Organically grown lemon or orange leaves, lightly oiled
Wooden toothpicks

Combine all the ingredients except the leaves in a bowl and mix well!. Roll the meat mixture into balls a little smaller than a ping pong ball, flatten them slightly, wrap a leaf around each, and hold the leaf in place by sticking it with a toothpick!.
When you have finished making your meatballs, grill them to taste!.

Some people also include grated lemon or orange zest or juice (or both) in the filling!.Www@FoodAQ@Com

I just got a new favorite side!
Carrots glazed with balsamic vinegar
Ingredients
1/2 cup (1 stick) butter
3 1/2 pounds peeled baby carrots or regular carrots, peeled, cut into 2-inch pieces, halved lengthwise
6 tablespoons sugar
1/3 cup balsamic vinegar
1/4 cup chopped fresh chives
Preparation
Melt butter in heavy large pot over medium heat!. Add carrots and sauté 5 minutes!. Cover and cook until carrots are crisp-tender, stirring occasionally, about 7 minutes!. Stir in sugar and vinegar!. Cook uncovered until carrots are tender and glazed, stirring frequently, about 12 minutes longer!. Season to taste with salt and pepper!. Add chives and toss to blend!. Transfer to bowl and serve!.Www@FoodAQ@Com

How about some sauteed mushrooms!. A little butter and some chablis wine!. The alcohol will burn away, but you will still taste some!.Www@FoodAQ@Com

Grilled sweet potatoe slices!.

Take a regular sweet potato or a few!.!.!.!.
Slice them into 1/2 slices
Brush each side with melted butter (only use butter)
When they get that nice dark orange look to them, they're done and sooooo yummy, especially with BBQ chicken!Www@FoodAQ@Com

mashed potatoes!!
easy cut up potatoes, boil, when done add butter, milk and sourcream(i discovered horseradish is good too) and mash up!. add salt and pepper to your liking!.

Roasted green beans:

1-1/2 pound green beans
1 tablespoon olive oil
salt, pepper, and red pepper to taste

Preheat oven to 450 F!.

Trim and wash the green beans!. Pour the oil in a large ovenproof skillet or on a cookie sheet!. Add the green beans, toss, and bake until browned, checking and stirring every 10 minutes!. Season to taste!.Www@FoodAQ@Com

Oh, me, me, me!!! Try this with chicken! You're going to love it! (Yes, it is an old dish, but great!)

Harvard Beets

1 – 1 lb Can of whole beets, drained & liquid reserved
1 Tablespoon cornstarch
1 Tablespoon sugar
? teaspoon salt (OR OMIT)
Dash of white pepper
? Cup of vinegar

In small saucepan, stir together cornstarch, sugar, salt (if used) & pepper!. Gradually stir in reserved beet liquid and vinegar!. Cook, stirring constantly, until mixture thickens and boils!. Boil & stir 1 minute!. Cut beets into quarters and add to mixture; heat through!.Www@FoodAQ@Com

Loaded baked potatoe (cheese, bacon bits, butter, chives, and sour cream!.

Loaded Sweet Potatoe (Butter, Cinnimmon, melted caramel and brown sugar and a sprinkle of white sugar)

Black eyed peas with bacon (cook bacon and add one can of black eye peas salt and pepper)

A box of betty crocker scalloped potatoes, or rice a roni

Dirty Rice (I'm from South)
Brown ground meat and drain, then add chopped onion and bell pepper and cook till soft then add chopped green onions, seasoning and one packet of liption onion soup mix, (mix soup into a little water then add it, you need to have about a cup of water when you add your cooked rice you don't want it to be mushy so not to much) then in a seperate pot prepare white rice and once it is done mix into your meat and gravy!.

Corn bread, dinner roll!.!.!.!.

Frozen corn with butter and salt and pepper

Homemade mac and cheese
put Boiled big elbow noodles into a baking pan add one can of evaporated mild, one small block velveta cheese cubbed, and maybe half a small block of mild chedder, one egg, and salt and pepper, top with paprika if you have it (just for looks)
bake at about 375 for 30 to 45 mins top will get a little golden brown!.

Mexican Cornbread: MY FAVORITE!
Brown ground meat and drain!.!.!.In a big bowl mix togther your favorite box of cornbread following the directions on the box, but add a little extra milk so it won't be dry, then add to the cornbread mixture your ground meat, one cubbed block of mexican velveta, you can add hot pepper if you like them (I don't) one can of regular corn drained, and one can of cream style corn!.!.!.!.mix all together and put in a baking pan and bake!.

Savory Okra and Tomatoes
3 C!. ? inch slices of okra
1 No!. 2 can tomatoes
1 sm!. can tomato paste
1 env!. dry onion soup mix
3 tbsp!. bacon drippings
2 tsp!. sugar
Salt and pepper to taste
Combine all ingredients in heavy saucepan; bring to a boil, stirring constantly!. Cover; simmer for 15 to 20 minutes, stirring occasionally!. Yield: 8-10 servings!.

Fried Green Tomatoes
4 or 5 green tomatoes
1/3 cup flour
3/4 teaspoon salt
dash of pepper (optional)
1/4 cup Crisco shortening

Remove stems ends from tomatoes and slice 1/2 inch thick!. Combine flour, salt and pepper; dredge tomatoes in flour mixture!. Saute quickly in hot shortening until brown on one side!. Turn, reduce heat, and cook until soft!. Move to warm serving platter!. Serve immediately!.Www@FoodAQ@Com

Flavored rice with corn
3 servings
1 C minute rice, raw
3/4 C chicken broth
1/4 C tomato juice
1/2 Tablespoon caldo de tomate seasoning(mexican)
Brown rice in a little butter and add the above ingr!. plus a can of corn!. Boil!. Turn heat of and let stand till done!.

Corn on the Cob!. Boil till done and spread mayo on the corn and sprinkle with chili powder and Parmesan cheese!.

Pea Salad
1 can peas
1/2 c squared white cheese
1/4 c minced onion
1 boiled egg, chopped
1/2 c mayo
Mix all ingr, and chill till ready to eat!.

Baked Creamed Corn
1 can corn
1 can creamed corn
1 egg
5 crackers, crushed
1/4 t!. salt
1/4 t pepper
1 T!. sugar!.
Mix all ingr!. and bake 350 for 1 hour!.Www@FoodAQ@Com

It's called canda tameta!. It's easy!. The ingredients are:

Sliced onions, sliced tomatoes, lime juice, paprika
Optional are cucumber slices (which I love) and salt (which I don't)

It's fantastic--flavorful and crunchy and healthy, too (unless you have an ulcer, of course, then the burn is awful!.) Of course, it makes your breath stink, but sacrifices must be made in the name of good side dishes!. (If I really have to go somewhere after, I just slice cucumbers and add lime juice and paprika!. But then it's not canda tameta; it's just yummy!.)

HOWEVER, make sure it's with something saucy!. Otherwise it just overpowers the dish!.Www@FoodAQ@Com
