Baked Herbed Dijon Salmon

Shopping list :

Salmon fillets -
Olive oil

Dijon mustard - I prefer any Dijon with no fat

1 lemon per two fillets

Fresh herbs - Dill and thyme

Cooking directions :

Pre heat oven to 350 degrees F

Rinse salmon in fresh water and pat dry

Place a sheet of foil on a baking sheet and cover with thin coating of olive oil

Place salmon skin side down on baking sheet

Squeeze the juice of 1/2 a lemon on and around each fillet

Salt and pepper to taste

Sprinkle fillets with a teaspoon of oil per fillet

Prepare about 2 tablespoons of mustard per fillet and both fresh herbs to taste in separate bowl

Spread mustard / herb mixture on fillets

Bake salmon on middle oven rack for approx 20 mins / for color : broil on top rack for 3 mins prior to serving

When salmon starts to showing the slightest white liquid on sides of fillets it is done

Serving :

Serve with fresh sliced lemon and your choice of side

Rice goes well with this dish and any crunchy green vegetable like green beans or broccoli

Wine suggestion : a white wine like a pinot grigio goes well with this dish complimenting the light flavors and settling the palate from the sharp mustard flavor

Easy way is to broil it!. Toaster oven would be great if you have one!. also boil some rice, serve with heated black beans on top and a salad on the side!. One simple meal!.Www@FoodAQ@Com

new mexico chile powder
crushed garlic
honey
Preheat oven to 450-degrees F!.
Salt both sides of the salmon!.
On a large cookie sheet sprayed with Pam, sear the fillet for 2 minutes on one side!. Brush with 1 teaspoon of the honey per filet!.
Continue cooking the fish for 5-10 minutes or until fish is done!.
To make Red Chile Honey, mix together wild honey, New Mexican red chile powder (or your favorte chile powder or crushed chile caribe) and a little crushed roasted garlic!. The longer it sits the better it is!.Www@FoodAQ@Com

I enjoy salmon patties!.
Salmon
chopped onion
1 egg beat
cracker meal
with 6 oz!. of salmon broke up, I would add about a small hand full of chopped onion,1 egg, cracker meal till the patty will stay together, pan fry!.
mead this all together ,make Patty's and fry!
Some times I'll melt a slice of cheese on top and sprinkle with dill!.

I like to put salmon on the grill, wrapped in a piece of foil!. Throw some butter on top and some lemon, pepper and cook for about 15 minutes!. You could do the same thing in the oven, or you could broil it the same way!.Www@FoodAQ@Com
