Question: What can I do with 1 LB of left-over braised beef brisket!?
i have some left-over beef brisket I should not let go to waste!. what should I do with it!. it was not smoked but braised!.Www@FoodAQ@Com

Hash!. Especially if you have some sort of potatoes to go with it!. Chop the beef into as small a pieces as you can get as well as the cooked potatoes!. Put in a nonstick or better yet a pan sprayed with nonstick spray or a little butter!. Put a chopped onion in with it!. A little salt and pepper, and maybe a little paprika!. Cook til warm stirring not so occasionally!. And Viola! Hash! Can also be made with corned beef!. Yum!Www@FoodAQ@Com

1/4 cup thinly sliced onions
1/4 cup thinly sliced green bell peppers
1 tbsp Zesty Italian Dressing
1 tbsp mayo
Your beef thinly slicedBeef
1 submarine rolls (7 inch), partially split
1 Tbsp!. pickled pepper rings

COOK and stir onions and bell peppers in dressing in medium skillet on medium heat 5 min!. or until vegetables are crisp-tender, stirring frequently!. Reduce heat to medium-low!.
ADD meat; toss to coat!. Cook 2 min!. or until heated through, stirring frequently!.
FILL rolls evenly with the meat mixture; top with pickled pepper rings!.Www@FoodAQ@Com

2 c!. shredded cold beef brisket, roast beef or flank steak
2 onions
1 green bell pepper
1 can tomatoes and liquid
1 clove garlic
1 tbsp!. wine vinegar
Olive oil

Great way to use left over beef:

Leftover Beef Enchiladas

SERVES 6

1 tablespoon lite olive oil
1 onion, sliced
1 sweet green pepper, sliced
1 sweet red pepper, sliced
1 yellow pepper, sliced
2 cloves garlic, minced
2 cups cooked beef
1 1/2 cups taco sauce
1 teaspoon cumin
6 flour tortillas
1 cup cheddar cheese, shredded
1/2 cup sour cream
1 tablespoon green onions, chopped

1!. Saute the onion & garlic until the garlic is fragrent & the onion is soft!.
2!. Add the sweet peppers for a minute!.
3!. Remove from heat add beef and 1/2 cup taco sauce!.
4!. Spoon about 3/4 cup of the meat mixture down the middle of each tortilla!.
5!. Sprinkle with 1 tbsp of cheese!.
6!. Fold the tortilla sides up so they overlap slightly!.
7!. Place them side by side, seam side down, in a 11x7 baking dish!.
8!. Spoon the remaining Taco sauce over them!.
9!. Spoon the sour cream in a line down the middle!.
10!. Sprinkle with the remaining cheese!.
