Chicken and Artichoke Salad

1 box rice a roni chicken flavored, prepared according to pkg directions, cooled
2 cups chicken chunks, cooked and cooled
1/2 cup italian dressing
1 cup mayo
1/4 cup green onions, chopped
2 tablespoons curry powder

While the rice a roni is cooking (and the chicken if it isn't already cooked), make the dressing by combining the mayo, curry powder, and green onions!. When the rice and chicken are cooked and cooled, combine in a big bowl!. Toss with the italian dressing!. Add the mayo dressing and toss to combine!. Season to taste with salt and pepper!. Refrigerate!. Serve at the cook-out with a baggie of ice underneath the bowl to keep it cool!. We do this all the time (baggie of ice) and it keeps everything just fine!.

Here's my sister-in-law's recipe for Bean Salad!. We all love it! Because of the type of dressing, you don't have to worry if it's not refrigerated for hours!

1 can green beans, drained (I normally get french cut)
1 can wax beans, drained
1 can kidney beans, drained (I prefer dark, but light's fine)
1 can garbanzo beans, drained
1 can artichoke hearts, drained and quartered
1 large red onion, slivered or diced
1 large green pepper, chopped

Dressing/Marinade - combine well in separate bowl
3/4 cup sugar
1/2 cup vinegar (red wine or cider)
1/2 cup salad oil
1/4 tsp!. salt
1/4 tsp!. pepper

Gently toss all veggies together with marinade!. We normally make a double recipe for the dressing so it covers all the veggies!. If you make a single recipe, toss regularly so they all get the flavor!. Keep refigerated until use!

Enjoy your cookout and family members!.Www@FoodAQ@Com
