Answers:
First the Mac-n-cheese: Freeze then defrost and add the topping and bake!.
Baked ziti I would do the meat sauce then top with cheese and bake!. I would not add the alfredo sauce but if you wanted to I would add the alfredo then top with cheese and bake!. If you are going to freeze I would freeze without the alfredo or the cheese!. When I got ready to bake I would thaw the top with alfredo and cheese!.Www@FoodAQ@Com

I always make a ton of mac and cheese and freeze it and it comes out great!. I don't put breadcrumbs on mine, but I would add them at bake time to keep them crispier!.

I think that Alfredo sauce freezes pretty well!. I don't think ti makes difference whether you layer or pour the Alfredo, but layering will probably make it go through easier!. Definitely freeze it with the sauce!.Www@FoodAQ@Com

I would just mix the alfredo sauce together with the noodles and pour into casserole and then top with cheese!. When I freeze lazagna, I buy an aluminum (throw -away) pan at the grocery store, make the casserole in it, top with cheese, cover with alumninum foil!.Www@FoodAQ@Com

Treat the white sauce and cheese as you would treat the red sauce!.!.!.mix it with the noodles!. And you can freeze it exactly the same!. And yes, you can freeze mac & cheese, then add the breadcrumbs once defrosted!.Www@FoodAQ@Com

Pretty much how ever you want to EXCEPT when freezing you will keep more flavor and texture if you freeze all separately!! Good Luck! I learned that on TOP CHEF!.!.!.Www@FoodAQ@Com
